Color is light brown with a magnificent three finger tan head that looks like you could walk across it; if you were 2 inches tall. The Pater is clearly in the same tradition as the other two: as soon as you pour it you will instantly recall the familiar and wonderful St. Bernardus aroma of hazelnutty chocolate. The flavor is the same as the big brothers, just scaled down here. It’s fun to have another take on the classic St. Bernardus flavor, but it’s tough to feel other than that ther is something missing in this: it doesn’t have that same remarkable balance of the Prior. Nor does it really make the most of its smaller frame. IT’s like looking at a guy whose suit is a bit too big. The nose is yeasty and spicey with hints of fruit, pepper, alcohol - nice and fresh smelling. The body is malty with a fair amount of yeast. Rich and hazy brown sugar color. Good white head that diminish to a thin film, leaving some laces. Aroma is dominated by the brown sugar but traces of pale malt + fruits. Taste is very sweet, nice but simple. I should leave my other bottles age more.

Dark Bread Taste, Bread Dough, Dry Fruits, Heavy Mouthfeel....Some Alcohol Warming Works its Way up and Ends with a Dry Bitter Finish.
