Aroma is very floral and yeasty, with citrus, peach, apple, and some banana. Flavour is equally floral and fruity, as well as extremely smooth, with more bready yeast, apple cider, citrus, banana, honey, and alcohol warming from mid-palate to finish. Mouthfeel is thickly smooth (thicker than most other Tripels I’m used to), with perfectly soft carbonation. Slightly sour in the finish, along with light bitterness. Last aftertaste. Slightly grainy yeasty aromas. A little spice as well. Slightly sweet dark fruitiness up front with a bit of yeast. Some bitterness follows along with a bit of apple cider qualities. Pours a medium straw color that turns hazy and medium amber as the glass fills. Towering, fluffy, sudsy white head. Sweet caramel noughat butterscotch nut delight on the nose. More of the same on the attack and the mid-palate; almost buttery but not in a diacetyl way. Smooth and silky body, medium thick with soft carb. Beautiful drinkable stuff. Clean lightly herbal bitter finish. This is a wonderfully considered beer; you can feel the years of perfectionistic efforts at work in the balance and the drinkability. Bread dough, beer yeast, and alcohol in the aroma.
Very flavorful with sweet fig, brown sugar, wheat bread, toffee, and mild chocolate malt. Dry spice and alcohol in the finish. Somewhere between medium and full bodied, moderately carbonated
