Commercial Description:
This beer has a generous head - compact and firm. Its slightly brown colour is the result of the roasted barley. It has a dark ruby brown colour and a very intense aroma. The aromatic herbs and spices used greatly enhance its delicious smell. This beer is full-bodied with a smoothness that is the result of the synergy of caramelized malts, carefully controlled fermentation and long cold storage. St Feuillien Cuvée de Noël has a very subtle bitterness that is the dominant flavour in this harmonious ale that strikes a perfect balance between all the different ingredients.

Reddish beer with big beige head. Aroma is great and inspirating, sweetness, spicy and lot of dried fruits. Flavour is sweet, fruitfull, spices and dryer in the end. Lot of carbonation that gives lighter feeling into quite full bodied beer.Complex, sweet and great beer without weekness, I will buy more of this beer to storage.

33cl bottle at Hunter’s. Dark ruby with foamy beige head. Mellow muddy nose, sweetness, carrot, nutmeg. Flavor is slightly metallic with strong spiciness, little licorice, quite a lot of alcohol, some carrot, dull dark candy sugar, little rust and rubber in the finish, loads of spicy booziness. Generic and boring strong dark Belgian, a lot in common with the normal Gouden Carolus. Though I’ll probably rerate sometime, given the communal score.

22 oz corked bottle. Best before date: 0830157 (no calender I use has a date like that). Clear ruby amber color with big chunks of yeast suspended and a thin white head that disappears pretty fast. Aroma has a lot of white grape, dark fruity notes, caramel, orange peel and some light spiciness. Flavor is very full of grape and brown sugar up front, a semi-strong orange citrus middle with some cinnamon spice and finishes with a light licorice, some grassy and yeasty notes to finish with a semi-strong alcohol presence. Carbonation is moderate with a lot of sugary density and chunky yeast feeling. Not too bad of brew and one I did enjoy but for the style, there are much better brews out there to have.

Bottle. Lovely dark copper pour with a long lasting light tan head. A slightly spicy nose with a touch of caramelised figs, nutmeg and toffee. The mouthfeel is smooth and warming and the taste is about the same, with a nice balance between the spice and the sweetness. Highly enjoyable in the middle of the year in Melbourne, even though it is a "Christmas ale".

Bottle. Body was opaque ruby-brown with a full off-white head. Aroma was strong malt, green raisin, grape, a little chocolate, cocoa and nutmeg, perhaps a hint of cinnamon and orange peel as well. Flavor was dominantely malty, date, twiggy, vinous, spicy and had a warming finish.

little stubby 330ml bottle provided by stickler stu!! .. . baked brown bread crust and belgian cellar yeast in the nose .. . great chocolate, cellar dust (nun allergies), and faint fruit in the taste .. . a great xmas brew.. . feels dru-ish ... . a real easy to drink brew for the winter, i would serve this to my guests, unlike last year were i flashed them...

Bottle. Deep ruby coloured pour with a decent beige head on top. Aroma of dark fruit and Christmas ingredients. Tastes of caramel, dark fruit, spices, plums, cinammon, Christmas pudding. Nicely balanced Belgian Christmas beer.

Medium dark amber, red tinge. Dark malts, sweet candy sugar, plums, raisin, spice, nutmeg, and hints of berries. Nice beer.
