COMMERCIAL DESCRIPTION
Also sold as ’St Feuillien Spéciale’ in the USA. This beer has a generous head - compact and firm. Its slightly brown colour is the result of the roasted barley. It has a dark ruby brown colour and a very intense aroma. The aromatic herbs and spices used greatly enhance its delicious smell. This beer is full-bodied with a smoothness that is the result of the synergy of caramelized malts, carefully controlled fermentation and long cold storage. St Feuillien Cuvée de Noël has a very subtle bitterness that is the dominant flavour in this harmonious ale that strikes a perfect balance between all the different ingredients.

Copper brown body and yellowish kaki head. Lots of spices, cinnamon, red apple, clove and sweet crusty bread. Lively carbonation, sweet start but more roasted malts and bitterness later on. Warming body, ending not too long but rich in flavour. Very refined and just enough spice. Tasty for for sure, although it could even be richer. (33cl bottle from Cave Gambrinus)

330ml bottle poured in a chalice. A: Pours a beautiful dark amber color. Clear. A big beige head is formed. Good retention. While it disappears many lacings are left S: Traditional sweet and fruity smell. Notes of grapes. A bit metallic. Very malty and bready (dark bread) followed by the delicious Belgian yeasts. A little bit alcoholic end T: Complex. Sweet upfront. Really fruity (dark fruits) and malty (caramel malts, mainly). Excellent earthy hops and the expected Belgian yeasts. Good example of "liquid bread". Nice bitterness. Finish is a bit alcoholic M: Medium to heavy body. Molasses and reasonably carbonated for such strong beer. Stereotypical but well-made, classic Belgian Christmas ale, sweetish and malty, candied fruits, spicy as expected, pretty complex and though cliché, this is very enjoyable.

750 bottle, pours reddish brown. 2012 on the cork. Lite lacing on the sides. Mild dark fruit nose, some cola like aromas. Explicit prune and fig flavors with brown sugar and anise in the background. Mild sweetness. Chirstmas in Aug. pretty good!

Elegáns, rubinvörös színét vastag, gyorsan fejlődő habkorona takarja, mely minden mozdulatot követően csipkés bevonatot hagy a pohár falán. Illata különleges, ánizsos, a Gouden Carolus Christmasnél megismert illatokat idéző, melyek egy elnyúló, élesztős alapon állnak, valamint egy mézben áztatott mogyorós-diós lepelbe vannak burkolva. Íze legalább ennyire sokrétű, ebben a főszerepet szintén a kissé mentolos, medvecukros zamatok játsszák, ezt színesíti egy grillázsszerű, kissé lágyabb aroma, majd egy visszafogottan kesernyés, stílusos zárás következik. Mindez egy közepes testű és szénsavtartalmú ital képében, mely egyébként remekül megkomponált és megnyugtatóan tökéletes ünnepi nedű.

Pours pale copper brown with a large lasting creamy head, sticky lacing, a good layer of retention, and surprisingly almost no activity. Nose: Brown sugar malts with a hint of spices. (lvl-4)-pungency Attack: bubbly-tingly/fizzy crisp mouthfeel, incoming malts + alcohol Mid-palate: (metallic copper taste-bottle contamination?), continued fizzy, (lvl-7)-sweetness, (MAIN) toffee malts, brown sugar, alcohol, molasses, cola, dark fruit Finish: bloated, alcohol, metallic malty bitter finish. Summary: Perhaps I got a bad bottle but this had an off-putting metallic taste to it. Coupled with it’s over booziness and excessive fizzy texture, I can’t recommend it.
