COMMERCIAL DESCRIPTION
This beer has a generous head - compact and firm. Its slightly brown colour is the result of the roasted barley. It has a dark ruby brown colour and a very intense aroma. The aromatic herbs and spices used greatly enhance its delicious smell. This beer is full-bodied with a smoothness that is the result of the synergy of caramelized malts, carefully controlled fermentation and long cold storage. St Feuillien Cuvée de Noël has a very subtle bitterness that is the dominant flavour in this harmonious ale that strikes a perfect balance between all the different ingredients.

Bottle 75 cL. Pours dark brown copper with medium offwhite head. Aroma is cumin, caramel and green apples. Taste is medium sweet and light bitter. Body is light oily with medium carbonation. Finish is medium long and oily with notes of bitter grapefruit, slightly burnt sugar/caramel and unpleasantly wineous. Highly overrated beer.

Dark brown red beer with a tan head. Aroma is malty with some notes of alcohol. Flavour is similar with some spices and a bit of caramel. Very nice Christmas beer. (Bottle 33cl)

Pours a deep orange/amber with a large tan head. Aroma is of raisin, caramel, lots of brown sugar. Flavor repeats the aromas but with the addition of Belgian yeast, heavy cream, some biscuit flavors. Ashy/sweet finish. Full mouthfeel/viscosity, medium carbonation. A very enjoyable Christmas ale from St. Feuillien, as anticipated. Overall, very good to excellent.

Pours opaque ruby brown brimmed by a frothy and dense tan head. The aroma... Rich maltiness and caramel malt, strident spiciness, perhaps from the yeast. Lightly fruity almost like tart apples.. Some hops seem to be present in the nose. Crazy. Flavor is very malty, fruity malt and caramel malt, considerable spice, some bitterness, tastes like hops but may be a product of the spice as this style usually doesn’t display hops lightly sticky sweet finish and aftertaste. That is one tasty abbey ale. Good stuff.

Appearance is really beautiful, the color of dark ruby with a big, rocky head. Aroma has strong dark fruitiness, sweet maltiness and spiciness; plum, pear, some caramel. Taste is medium to heavy sweet; maltiness and fruitiness are rich with Belgian yeast adding spicy elements. Hoppiness is mild to moderate, balancing a bit. Dried fruitiness and spices feature most. Spiciness is moderate, not over-the-top. Palate is medium to full bodied, quite smooth despite the carbonation being a bit lively. Nice sweet and attractive Christmas beer.

UPDATED: FEB 11, 2011 Bottle 2008, exp 19.09.09. Pours a nice mahogany colour with a tan head. Pipe dates, nuts, caramel and a hint of alcohol in the aroma. Flavour is very similar with bitter notes and a nice balance. No signs of oxidation. This was much better than a fresh bottle.

Tap pour - ruddy brown pour with a thin off-white head. Aroma is bold and yeasty...lots of spice, malt, bread, hint of licorice. Flavor is similarly yeasty and bready, slight hint of bittering hops, fruit (dark), anise note, and a good dose of spice...pretty intense stuff. Palate is medium bodied and the alcohol was quite evident in this brew...somewhat chewy. Good brew overall, though didn’t feel right drinking this with warm temps outside!

0.33 l bottle from Alko. Great head and copper brown colour. Not as dark as I expected. Taste resembles toffee with a hint of bitterness. Interesting, this is different than most of the winter or chrismas beers or ales. I’m glad this is in a small bottle, since the 9% of alcohol might be too much unless your are having a company.

[bottle] Pours a nice dark brown color- head is light, white and fluffy. Aroma is strong and fruity, as is the taste. This is a fine brew, a treat for christmas.
