COMMERCIAL DESCRIPTION
Also sold as ’St Feuillien Spéciale’ in the USA. This beer has a generous head - compact and firm. Its slightly brown colour is the result of the roasted barley. It has a dark ruby brown colour and a very intense aroma. The aromatic herbs and spices used greatly enhance its delicious smell. This beer is full-bodied with a smoothness that is the result of the synergy of caramelized malts, carefully controlled fermentation and long cold storage. St Feuillien Cuvée de Noël has a very subtle bitterness that is the dominant flavour in this harmonious ale that strikes a perfect balance between all the different ingredients.

Bottle, bb 9-2016. Pours dark ruby with a large off white head. Aroma: wet hay, berries, earthy, grass, clove, aniseed, candy sugar. Taste: dark and red fruit, candy sugar, overripe blue grapes. Pretty sweet, light-medium bitterness, somewhat thin oily mouthfeel, soft carbonation, relatively dry finish with pronounced aniseed taste.

330ml bottle, poured into La Chouffe tulip. A: Dark ruby, bronzy in colour, looked thick without being opaque, medium slightly tanned head, pretty good head retention. S: Cherry, molasses. T: Fig, prune, brown sugar, some cherry which faded before any sourness could kick in, something made me think of mouse. Kept the booze under wraps. M: Light texture, moderate carbonation. O: Good beer to accompany a heavy meal on a cold day, does what its supposed to.

Lastin light brown head (well longer than a minute,) dark brown hue, soft to flat carbonation, full body, molasses or carmally in smell and taste and fairly spicey/ pronounced nutmeg and a little pepper. Balanced of sugary sweetness and bitter finish, average duration. NICE

Bottle. Pours beautiful dark red/amber with a nice white head. Just looks great. Strong fruity aroma with some syrup hints. Candy, sweet fruits, some malts and a nice smooth finish. Alcohol not to dominant. Just goes down smoothly. Nice brew.

Pours browny. Estery and Frangipan aromas. First sweet in mouth, then cooked banana and spices (cinnamon and soft pepper). I expected more fragrance and exhuberant flavours in such a Cuvée. Finish is too quick.

330mL bottle. Pours medium reddish brown with suspended chunks. Medium sized off-white head that settles out slowly. Aroma of apples, grapes, bread, toast and caramel. Caramel and malt dominated, quite sweet, a little fruit, slightly acidic. Medium body, lively carbonation, some heat. Long sweet finish.
