Also sold as ’St Feuillien Spéciale’ in the USA. This beer has a generous head - compact and firm. Its slightly brown colour is the result of the roasted barley. It has a dark ruby brown colour and a very intense aroma. The aromatic herbs and spices used greatly enhance its delicious smell. This beer is full-bodied with a smoothness that is the result of the synergy of caramelized malts, carefully controlled fermentation and long cold storage. St Feuillien Cuvée de Noël has a very subtle bitterness that is the dominant flavour in this harmonious ale that strikes a perfect balance between all the different ingredients.

750ml bottle purchased at the Davis Food Co-Op. Aroma is a initially sweet, but it becomes quite peppery and spicy with some belgian dusty yeast notes. A little roastiness and some brown sugar is also present. The pepper prevails, though. Moderatley hazy amber body with an off-yellow/light tan head that is pretty large and pretty strong. Pretty nice lacing. Wow. Extremely metallic. Yikes. I feel like I am sucking on a penny. There is some sweet and sugary malt flavors in the middle with a bit of roastiness. Otherwise, this is dominated by a weird metallic flavor. Not a fan at all. As time goes on, the metallic flavor subsides, leaving a sweet, sticky mess behind. This beer is a fucking mess.

From a bottle at Chez Sophie in Shrewsbury. Dark ruby with a substantial head. Not a particularly big aroma, but getting some caramel and subtle spiced fruit. Big, rich mouthfeel with gingery, plummy fruitcake flavours, fading a little to a slightly disappointing finish.

Deep amber in appearance. Lots of caramel sweetness in the taste at the start but with a slightly bitter finish to really even it out. Pretty boozy and warm.

330ml bottle. Pours deep amber/brown with a big and persistent off-white head. Aroma is malty, caramel, toffee, anise, licorice, amazing complexity. Flavour is sweet, malty, caramel with a good bitter end, some roots notes in the aftertaste. Full body, medium carbonation. A very nice winter beer!

F: pale brown, huge and long lasting. C: dark ruby brown. A: caramel, anise, liquorish, hint of spicy, malt, yeast. Draught @ Rattle&Hum. Cloudy dark brown with small foamy beige head, spicy caramel aroma, low carbonation, caramel taste with cinnamon and a hint of cloves, typical Belgian yeast taste, long spicy finish. Noce for a winter warmer.

Pours a deep brown with almost no head. Aroma is strong anise, prune, caramel, cola. Taste was very cola sweet, anise, prune/raisin. Low carb, very sweet, and sticky. Medium body. Not my fav by far.
