COMMERCIAL DESCRIPTION
Also sold as ’St Feuillien Spéciale’ in the USA. This beer has a generous head - compact and firm. Its slightly brown colour is the result of the roasted barley. It has a dark ruby brown colour and a very intense aroma. The aromatic herbs and spices used greatly enhance its delicious smell. This beer is full-bodied with a smoothness that is the result of the synergy of caramelized malts, carefully controlled fermentation and long cold storage. St Feuillien Cuvée de Noël has a very subtle bitterness that is the dominant flavour in this harmonious ale that strikes a perfect balance between all the different ingredients.

33 cl bottle, best before end 21.09.11, tasted in Kasteel 11 glass Bottle had a thick ring around the neck with tons of yeast floaties when poured. Aroma-musty, earthy, burlap, sweet-sour tart fruit. Appearance-fluffy lively tan head, murky brown color. Taste-a creamy well-balanced mix of sweet cinnamon, pepper, candy sugar, caramel, a touch of anise with a slightly sour-flinty-herbal finish. Palate-medium bodied, creamy, lively carbonation. The 9% alcohol is hidden quite well. A very good beer despite being past its date.

Very cloudy brown color with red hue, average sized off white head. Aroma of overripe fruits, strawberries, malt, yeast. Full body, lively carbonation. Creamy texture. Taste is sweet with some bitter notes in finish. Very nice, actually.

A classic Belgian beer seasonal! A label that reminds Christmas and Santa Claus! Reddish copper color, with a beige cream voluminous, compact and solid. A delicious aroma emerges, being well fruity with strong presence of red fruits, and malt rises as well, gently toasted caramel hops providing a special touch in a well integrated carbonation in the set. Condiments bring a special and soft touch and the medium / low bitterness is underscored by the spices. It also appears, a citrus and floral perhaps simple touch. At first sip I felt a consistent carbonation that great body, and there stands the caramel a balanced combination where the flavor is balanced with the malt, hops and fruit in the exact measure. At no time this beer proved cloying and heavy although we are in full in December, spring / summer of the tropics. A master worthy recipe this drink. The end has a long, discreet closing, tasteful, without excesses leaving a soft taste and a malt that balances the senses remaining in the aftertaste. Alcohol shown is noticeable despite its 9%! Fantastic!

10/01/2015 @home 33cl bottle from De Hopduvel. Ruby-brown with tanned head. Aroma is sosdark malts, spices, dark fruits. Taste is dark malts, dark fruits, sweet caramel, some alcohol and bitterness in the end, nice balanced. I’ve had it way sweeter. Let it in the cellar for a year!

A reddish brown coloured beer with a frothy beige head. A strong a distinctive spicy aroma, liquorice and aniseed lead off, then clove and cinnamon usher in a caramel malt aroma. Dry mouthfeel. A mild bittersweet taste, loads of spice dominated by the liquorice, dark caramel then bring forth a dark fruit flavour. The finish is lengthy and full of caramel and liquorice, aniseed spice. Tasted at Moeder Lambic "Fontainas" Brussels. ---Rated via Beer Buddy for iPhone

33cl bottle. 2012. Archer Road Beer Stop, Sheffield. Clear, dark red. Head starts off big, and rocky, then settles and becomes dense, sticky, and lasts. Very perfumed, floral, dark cherry fruits. Sugary, toffee malts. Smells lovely. Taste is thick, chewy sweet. A stone fruit bitterness aids balance. Smooth, rich palate. Pretty easy drinking, though. Finishes mostly sweet, with a light, spicy bitterness. Very nice. Bit sweet, but easy drinking.

2012 vintage, shared 12/2014 @Post-Nikolaus tasting. Subtle aniseed and liquorice yeast accents plus good hop bitterness lay a near-savoury blanket over dry caramelised malt layers, herbal honey, cranberry marmelade. Well-balanced (partly thanks to aging?) example of the slightly anachronistic sweet & spiced Wallonian-style Belgian strong ale.

Dark ruby, nice long foam sort of cream-colored foam. Prune, apricot, black pepper, sherry, brandy, caramel, honey aromas. Tastes of sweetness and alcohol together with aromas. Long sweet finish. Warming, some viscosity. Full bodied a average to soft carbonation. Great beer.
