375 ml bottle. Pours a cloudy orange-golden with a thick, resilient white head. Aroma is apple, dust, tart, green fruit. Flavor is tons of tart, green apple, oldish, dusty, wild yeasts, spices. Finish is very tart, sour, green appleish. Medium body, soft mouthfeel, average to strong carbonation. Simple, but not bad.

375ml bottle. Deep copper pour, thin white head. Aroma is strangely spicy, fruity aromas, apricots, prunes, cinnamon, fall fruit pie, light lemony notes, not much funk. Taste is sweet, light tartness, winey fruitiness. Palate is med-full bodied, light carbonation, sweet. Very strange, not necessarily super appreciable. Probably won’t drink this again.

Have had both bottle and draft. This beer has a permanent line at my local beer bar (Deep Ellum).
Pale straw colored lambic, with light bubbles and a white head that is quite thin and fairly rapidly receding, even in the bottle. Good clarity on draft, and the bottle does show sediment left behind on the bottom.
Vinous, acetic, moderately strong nose displays classic gueuze aromas, but none of the intense, cheesey/horseblankety sweat of Cantillon or dominating tartness of the best 3F’s. Still, very pleasant with no sugary notes. Reserved, but thats certainly not a bad thing. Just a more even-keeled, approachable gueuze.
Flavor is moderately sour for a gueuze, with the sourness building a crescendo and climax on the finish, which is still certainly mouth-puckering at first. Oily, low carbonation (less so on draft, of course, but still appropriate) and a medium to medium light body with very little wood in the flavor. Pretty straightforward, certainly delicious and well-made but not going to bend your mind if you’re a staunch fan of cantillon/3F and the like. Ranks somewhere below Cantillon, 3F, de cam, and Girardin, among the likes of Hanssens and Lindemans, though not nearly as good as the best of either of those.

Thx ferris! Amazingly unique aroma! Roasted caramel, borderline rubber, yeasty, light grass. Watery taste odd, light lemony sourness, lightly toasted crusts. Totally unique. I gotta catch up!

Bottle - Caramel, apple, oak and funky sour. Cloudy light orange with a thin head. Light funk and sour notes, some citrus and not much else. Very refreshing, but smells so much better than it tastes.

Classic lambic. Very complex sour and barnyardy character. Puckering, but just enough balance to be enjoyable.

Bottle from Bedford Beer Festival in October. I couldn’t wait anymore! Hazy golden brown. Carbonation and head are considerable. Yeasty aroma with only a bit of funk. Sharp kumquat and astringency also prominent. The taste is of baked bread and fresh citrus: heady and sour. Smooth, almost sweet notes to the finish. Gritty umami aftertaste. An amazing beer.
