St. Stefanus est une bière non pasteurisée à fermentation haute, qui est aussi refermentée en bouteille. Elle est brassée à partir de trois levures différentes, l’une étant la souche de levure originelle Jerumanus provenant de l’abbaye Sint Stefanus. Abbey beer since 2012 apparently made for the augustine monks of Ghent; a derivative of Augustijn, but refermented with Brettanomyces, which in this case makes a big difference. Yellowish white, stable head over a misty orange blond beer, fruity aroma of orange peel, pear, caramel, white grapes, grassy hops and indeed a vague leathery Brett hint. Fruity, rounded palate, caramelly malts, yeasty, again vague Brett leading to a dry, grassy finish. Much better than the mediocre Augustijn, in my opinion - and better than what I am used to from this brewery.

Appearance: Golden colour with a white head.
Aroma: Fruit, yeast, spices, malt, coriander.
Body: Medium body and carbonation.
Flavour: Fruit, spices, some caramel, citrus, alcohol.

Bottle from Waitrose, about four months old. Light caramel colour, with a large white head. Medium body - not quite creamy. Aroma of Belgian yeast and pepper. Flavours of toffee malt, herbs and vanilla. Fruit content is relatively subdued. Dry finish.

Bottle from Waitrose in Balham. Hazy rich looking golden amber, off white big head, which dissipates to nothing. Nose is sweet, perfumey esters, light pale grain and toasty grain, baked brioche, lighter faint notes of honey. Taste is malty, sweet, perfumey esters, slight white wine vinous, pale grain. It’s very slightly muted and lacks the crispness flavour of something like Duvel.

330ml bottle at home, poured into a Hoegaarden glass. Hazy yellow, slim off white head. Vanilla and spice aroma, similar flavours with a hint of mandarin. Noticeably smooth mouthfeel, alcohol well hidden. One to savour

33cl bottle, hazy golden color, medium creamy white head, yeast and coriander aroma with citrus and banana notes, sweet flavor, medium body, finish with yeast and spices, very nice (bella sorpresa, erano anni che non assaggiavo una buona belga nuova, magari esagero col voto per quello ma son soddisfatto)

Bottle from Waitrose. Clear, dark gold. Film of white head. Lots of bready, fruity, honey booziness. Taste is dry, with a light tartness. Soft, sugary palate, that feels a bit watery. Herby, dry finish. Pretty good. A while in the cellar would make a difference, I reckon.

"Cool - nice little surprise here. Bready aroma, with nice fruit and spice as well. Clean and crisp flavor, yet complex. Probably one of the better Belgian "blondes" I’ve had. Yeasty. Doesn’t do anything different, just does it well."

Smoky aromas, wood tones but a bit dry, lacks complexity. Very lovely foam, consistent. Not bitter at all, slightly sour but not in a bad way. Very balanced. Doesn’t appear to be 8% - very treacherous.
