COMMERCIAL DESCRIPTION
St. Stefanus est une bière non pasteurisée à fermentation haute, qui est aussi refermentée en bouteille. Elle est brassée à partir de trois levures différentes, l’une étant la souche de levure originelle Jerumanus provenant de l’abbaye Sint Stefanus. Bouteille de 75 cl.Robe blonde trouble.Mousse "belge" abondante, blanc-cassé, se dissipant à moyenne vitesse.Au nez : épicée légèrement, levures.En bouche : léger mais originale.Petite acidité.Notes de cidres, pommes.Levures, épices.Le tout très léger.Déjà dit, original.Pas excellent mais je persiste.

bottle 6 months old. AROMA: bread, grass, APPEARANCE: golden, clear, white foam, frothy TASTE: light sweetness, medium bitterness, PALATE: light body, thin feel, lively, bitter, astringent, OVERALL: very thing and light with a malty aroma; drinkable but nothing too special.

Abbey beer since 2012 apparently made for the augustine monks of Ghent; a derivative of Augustijn, but refermented with Brettanomyces, which in this case makes a big difference. Yellowish white, stable head over a misty orange blond beer, fruity aroma of orange peel, pear, caramel, white grapes, grassy hops and indeed a vague leathery Brett hint. Fruity, rounded palate, caramelly malts, yeasty, again vague Brett leading to a dry, grassy finish. Much better than the mediocre Augustijn, in my opinion - and better than what I am used to from this brewery.

Bottle from Waitrose, about four months old. Light caramel colour, with a large white head. Medium body - not quite creamy. Aroma of Belgian yeast and pepper. Flavours of toffee malt, herbs and vanilla. Fruit content is relatively subdued. Dry finish.

Bottle from Waitrose in Balham. Hazy rich looking golden amber, off white big head, which dissipates to nothing. Nose is sweet, perfumey esters, light pale grain and toasty grain, baked brioche, lighter faint notes of honey. Taste is malty, sweet, perfumey esters, slight white wine vinous, pale grain. It’s very slightly muted and lacks the crispness flavour of something like Duvel.
