COMMERCIAL DESCRIPTION
St. Sylester’s Flander’s Winter Ale is a rich Hearty winter ale top fermented in the classic tradition. In1918, Remy Ricour took over the old Brasserie in St. Sylestre in the heart of French Flanders. His dream was to produce authentc brews like the Trappist ales brewed at the nearby Monastery of Mont de Cats before the turn of the Century. Today, Serge Ricour, continuesthe third generation family tradition of brewing had crafted, full flavored, top fermented ales. In Flanders, it is traditional to make a hearty brew for Noel. At St. Sylvestre, hops are harvested in the fields surrounding the village. The "Malterie", 20 kM away, supplies a malt, with and appropriate Munich roast. The local hops plus the robust malt, produce a winter al with rich warm brown tones. While originally brewed only for Noel, it is now drunk throughout the winter season until the first brew of spring arrives.

750 from deftim at Bill’s sour tasting. Poured oragne and dark with a tan ring. Nose was sweet. Taste is sweet tart and bitter. A very nice brew.

Amber coloured and clear. Has a white head, mostly diminishing. Aroma is malty, light bread, toasted and caramel. Flavor is moderate to heavy sweet. LIght bitter finish. Creamy texture and lively carbonation.

Deep amber pour with a tight off-white head. The aroma is a little bit chewy and lightly caramelly. Some nice fruitiness along with a rich cooked plum fruitiness. There’s a nice stewed fruit flavour along with a hint of spice as well. There is a little bit of soft pepper. Not a whole lot of rusticity but it does have an aged character that I enjoy.

Couleur cuivrée translucide avec une effervescence active mais éphémère. Assez mince en bouche avec des notes de pommes. Légère acidité en fin de bouche.
