Bouteille 750ml sous le nom de "Brassin d’Hiver". Nez de levures fruitées (léger de fruits rouges, traces d’agrumes et de pommes), de malt sucré, léger de houblon hebreux et de pain avec quelques notes de caramel ainsi que quelques traces d’épices et d’alcool. Moyennement ronde en bouche et modérément pétillante avec une texture légèrement huileuse. Goût de levures fruitées aux petites notes acides (léger de pommes rouges, notes de cerises, traces d’agrumes) avec des notes épicées lors de l’entrée en bouche suivi d’un goût malté sucré et légèrement terreux avec des notes de caramel et de pain puis en finale l’on retrouve une légère amertume de houblon hebreux avec des notes d’alcool réchauffantes. Post-goût moyen, légèrement amer d’alcool et de houblon herbeux avec un léger goût de levures fruitées. (notes de 2006)

Bottle, 75cl corked. As Brassin D’Hiver. A big, off-white head. forms over an almost clear dark golden body. Some lacings left. The aroma is rather spiced and herbal, with toffee-ish maltyness and pale malts. A touch of fruits too. The flavor is pretty much the same, sort of typical BdG, maybe a bit too fruity though. Full body, quite dry. Lasting finish with biscuits, dried fruits and caramel. A quite pleasant one. 130222

750 ml bottle (aged almost 2 years), clearly labeled Brassin d’Hiver (and not Bière de Noël...). Pours a clear reddish amber with a resilient white head. Smell is malt, cereals, chocolate. Flavor is very malty, chocolate and soft caramel. Very little hops and bitterness, subtle finish. Lingering notes of chocolate and caramel. Medium body, soft, sticky mouthfeel. Average carbonation. Good!

Belle couleur orange cuivré, sous une tenace mousse tirant sur le crème ; liquide parfaitement limpide. Les saveurs de sucre cuit, de crème brûlée et de fruits tropicaux, annoncées au nez, se manifestent. Une belle bière plutôt ronde, qui cache bien son alcool. Une des meilleures françaises sur le marché québécois.

Sampled @ PINT Winterbierfestival Gouda 2013. [as Brassin d’Hiver] Clear orange to brown color, small light beige head. Smell malts, some sweetness, lightly alcohol. Taste malts, some sweetness, lightly yeast and herbs or spices. A bit thin texture, ok body, low to medium carbonation.

750ml bottle as St. Sylvestre Brassin d’Hiver aged one year in my cellar. Pours with a large creamy head, red/amber colour. Aroma is boozy, nutty, sweet and fruity. Taste has those elements plus some herbal hops. Body is light and crisp, but slightly flat. Overall, not quite as amazing as the Gavroche, but still enjoyable.
