375 ml corked and caged green botle poured a hazy gold with a lasting white head. Aromas of straw, spice, light fruittiness and light yeast. Palate was light bodied and crisp with a dry finish. Flavors of straw, earhiness, spice, ight yeast and light fuittiness with a crisp dry lingering straw finish.

Green bottle (lots of pressure behind the cork). Pours with a hazed golden yellow hue with a very massive white head that leaves great lace. Aromas are strongly farmhouse, musty, aggressive phenols, pepper, mild clove, sandalwood, earthy, spicy hops, with light but sharp esters. Smells authentically belgian. Spicy, thistle, hops. Light citric acidity. Flavors show mild malt sweetness, spicy, hops, some tart yeast, nettles, phenols, herbal hop notes, quite dry with mild esters. Chestnuts. Pretty straight forward beer. Very lively bubbles, mildly tart and bone dry.

Bottle, and at $5.99 I believe the cheapest bottle I’ve ever had with a cork. Pours a deep, deep hazy orange body with nice thick white lacing. Aroma is funky, tea, lightly earthy, and weird baby food. Mouthfeel is medium, smooth with notes of tea, bitter grass, floral, and a bit earthy funk. Nice.

Bottle in Hotel Room, Chicago. Cloudy yellow/golden - white head. Herbal, tea, flowery, spicy notes, pleasant, crispy, light barnyard, light sourish notes, grainy, citrus/sourish freshness. light peppery, light bitter/zesty notes. Nice freshness.

Pours hazy gold into a tulip. Bright white head with little retention recedes to hug rim leaving spot lacing. Sweet caramel, toast and honey aromas. Crisp with sweet honey and citrus upfront turning to mild earthy resin in the lasting finish.

375ml Bottle: Aroma of malt, grain, barley, yeast, herbs, rye, barnyard, raw spelt, herbs, and slight leather. Poured a muddy flaxen/apple juice/wheat/pale orange color with a small, creamy, dense, off-white head that diminished but lasted throughout. Cloudy. Sparkling. Opaque. Flavor is lightly sweet and lightly bitter. Tastes of malt, grain, barley, yeast, dough, raw spelt, herbs, and citrus. Medium body. Lightly dry texture. Average to lively carbonation. Malt, grain, barley, raw spely, slight citrus, herb finish is lightly sweet and slightly bitter. Just a mess of grains.

Golden yellow with a fluffy white head. Some vegetal notes on the nose, but good layers of citrus fruit. Medium bodied saison with a mix of Belgian yeast an herbal flavors. High in carbonation, long complex finish.

(375 ml from Oak Street Provisions) Gold/light bronze body with some haze. Tall, lumpy off-white head. Aroma of yeast and grain. Mouthfeel smooth, medium-full. Flavor is yeasty, bready (kind of) but the spelt gives it a unique kind of bready/grainy-ness. Mild, interesting.

Draft a bad apple. Pours hazed and golden with soapy white head. Aroma is rather spicy white peppercorn and yeast, honey with a real floral hopping. Flavors are again rather spicy but the honey meets it well, white pepper up front but a sweet floral and honey middle, a bit phenolic and spicy in a long finish. Pretty tasty saison, only issues really is the body, it’s thin and the feel is flabby.

375, corked and baled. Cloudy medium gold with a loose white film on top. Big interesting funky grainy nose, some really nice freshness to it that makes you feel like you’re out in a grain field on a hot dusty day. A little bit of barnyard funk to it, but tinged with a sweetness--barely funky at all. Maybe it’s an acetobacter tang. Creamy medium body with bright and lively carb. Nutty, slightly corny, grainy, husky mid-palate, with some light white-pepper esters near the finish. Very pleasant drinkable. Another Stillwater that’s interesting and fun to drink.
