P: Highly effervescent pale straw body with a slight haze and a massive wall if sparkling wine head. Superb retention like a mountain of snow. S: Green bottle skunk, pilsner malt, grains of paradise, black pepper, coriander, honey and delicious yeast. T/M: Raw grains, black pepper, coriander, delicious belgian yeast, grains of paradise, green apples, apricot, metal, faint bubble gum and unsalted crackers. Floral and leafy overall a really naturally rustic flavor. Silky smooth body with surprisingly timid carbonation that finishes crisp and dry. O: Great rustic balance with a subtle sweet and funk. This is super easy drinking and the yeast was balanced and complimenting. I really enjoyed this collaboration. Cheers!

Pours a hazy yellow with lots of fluffy white head that leaves spotty lacing. Aroma of Belgian funky yeast, grass, and slight lemon. Taste is a very common saison feel, funky and farm like, but well done. Bubbly mouth and a hint of burn in the gut. Nicely done, but nothing crazy.

Pour is a hazy yellow with a huge white head. Aroma is more grainy then fruity. I don’t really know what spelt is but I guess that’s what’s giving off the grain aroma. Flavor is a little more fruity then grainy but both are equally there. Finish is extremely carbonated and sweet. This was decent but I kept thinking it was missing something like some esters or a more pronounced hop.

Blond, licht oranje van kleur. In de neus veel hop, beetje kruidig. Afdronk is volmondig bitter, licht fruitig (citrus). Nasmaak remt lang uit. Allemaal mooi gebalanceerd, zeer vlotte aangename drinker

Shared with stevencon! Hazy copper pour with a fluffy white head. Funky, spice, raw grain, earthy, rustic aroma with some floral notes. Spice, grainy front palate, slight yeast funk, touches of balancing sweetness, grassy with a crisp peppery finish. Nice carbonation. Tasty stuff.

Shared with rbrazell. Cloudy straw orange huge pillow of white head. Earthy notes along with bubble gum. Effervescent dry mouth feel. Grainy earth and funk. Carbonation is a bit harsh and tannic.

Bottle. Head is initially large, fizzy/frothy, white, mostly lasting. Body is hazy medium to dark yellow. Aroma is moderately malty (toasted grain / crackers, sourdough bread), lightly hoppy (herbs), lightly yeasty (cobwebs, barnyard), with notes of pepper, minerals, autumn leaves, apple skins, straw, oak/twigs. Flavor is moderately sweet, lightly acidic, lightly bitter. Finish is lightly sweet, lightly acidic, moderately bitter. Light to medium body, velvety/fluffy texture, lively carbonation. It’s hard not to be effusive about this one...this is pretty much tailor-made for me. I was a HUGE fan of Blaugies d’Epeautre back in the days when it was a world-beater. It’s still quite good these days, but nowhere near its former glory. Mind you, I’m not going to sit here and claim I can "smell the spelt". I have used spelt in breadmaking a few times long ago, and I also used to eat spelt pretzels (Newman’s Own) all the time, but I would never claim I could pick it out of a police line-up (by nose). But when I took the first whiff of this, Blaugies d’Epeautre *instantly* sprang to mind. And this is about as good as that beer was in its heyday...perhaps a tiny bit less complex, but we’ll see what this is like with another 6 months of bottle rest. There’s just something about spelt, I suppose, that’s really rustic, nostalgic, and nourishing to me, and it’s probably largely involuntary. And this couldn’t be too much better of a rendition of saison, really...super clean (and yet, again, very rustic...not to mean "wild" exactly...but very farmy), super balanced, super quaffable, tremendously rustic nose, wonderful mouthfeel, long finish...and I really could not find any flaws with it. It’s examples like this why saison has long remained my favorite style...to re-quote myself, saison is life!
