starting with a base of German wheat & pale malts this crisp slightly hazy foundation was then accented with a blend of Sterling & Citra hops providing a intricate blend of herbal grass & tangerine citrus flavors and aroma. to pull this all together and to complete the ’cleansing’ aspect of my vision i gently finished the ale off with a touch of white sage, lending a mild earthy spice character to the blend. of course let’s not forget our house saison yeast that brought all the elements together leaving a dry yet intricate finish.

Dry hay in color with a towering ivory head. Aroma of lemon grass, yeast, and mild citrus. Flavor is crisp and clean with some fresh cracked pepper, light barnyard, and citrus. Medium mouthfeel. Really nice.

750 mL bottle. Pours a clear, pale yellow color with a thick white head and no lacing. The aroma is lemons, green apples, hay, and a lot of yeasty funk. The flavor is fruity sweetness up front and through the middle, with a little bitterness and sourness in the finish. The palate is light, crisp, acidic, and clean through the finish. Overall, this is a wonderfully crafted and subtle beer. Very light and drinkable, yet complex.

4 ounce sample on tap at the Davis Beer Shoppe. The aroma has a fair amount of banana esters and a distinct dustiness. Fairly fruity. Body is a moderately hazy golden color with a smallish, off-yellow head. Starts spicy, dry, and quite carbonated. Very bubbly--champagne-esque. Becomes fruity with mild yeast dusty esters. Strong carbonation throughout. Fairly drinkable, but it would be more drinkable if the carbonation was toned down. The carbonation hides the flavors and creates a bit of a one-dimensional beer.

On draft at Craft. Pale yellow looking with lively carbonation. Very refreshing taste with a wheat beer-esque finish. Smells quite herbal, but I couldn’t put my finger on it.

UPDATED: AUG 12, 2012 Draught at Craft Beer Co. Hazy golden, medium white head. Spicy, a bit cloyingly so. Semi dry low bitterness. Not my kind of wit.

Hazy golden with a large white head. Lightly spiced aroma, yeast, a bit of hops, and light fruits. Sweet fruits, light spices, a bit of wheat, a bit of citrus, and floral. Medium, carbonated body. Pretty fun brew but not an everyday drinker.

750 ml bottle. Pours a cloudy orange hue with a medium thick white head. A great nose full of oranges, pepper, some banana, sage, very complex. The flavor is very nice; sweet light peppery and citrus flavors, lemons, dry, pears, full bodied and lingering sweet dry Belgian yeast. Very nice.
