COMMERCIAL DESCRIPTION
For the first edition of the Stillwater Import Series I traveled to the village of Beerzel, located in the Antwerp province of Belgium. Here I teamed up with brewmaster Jef Goetelen to craft an authentic Belgian version of my liquid interpretation of the Spring season. A recipe originally contrived a few years prior as a collaboration brew with my good friend Paul Kretzer. The base is German barley & wheat, with a touch of Belgian aromatic; accented with grassy hops and an array of spring botanicals (heather, chamomile, lavender, & dandelion). Like a fresh meadow in spring. (now currently brewed at Two Roads in CT)

11.2 oz bottle into a New Belgium goblet. A: Pours a reddish copper color. I like the head on this one: one fingers high, offwhite shade, and superbly creamy. Retention isnít amazing, though, nor is the body itself that attractive. S: Ridiculously herbal. I wonít go into detail identifying all of the notes, so Iíll just say it smells like some utopian spring day. Allowing it to open up will reveal slight brett touches, as well. T: Itís not as dry as I expected. Wheat malt sweetness (similar to a good dunkel) both opens and closes things - with the herbal qualities sandwiching themselves into the middle. Itís fairly piny, but not in a hop-derived manner. Also sneaking into the back end are some subtle brett notes. Thereís a good balance between the spice profile and the malts. If the aroma made me think of spring, the flavor makes me think Christmas for whatever reason. Ah well, good brew. M: The initial sweetness is cleaned up nicely on the finish, replaced by a prickly, lively sensation. I like the sweet/dry balance here: the sweetness simply balances out some of the potential harshness an overly dry finish could have created. Carbonation is very high, but thatís expected from a saison. O: This one doesnít blow me away, however itís an easily drinkable brew thatís also mildly complex. Iíd gladly drink this again.

Not bad orange like pour. Floral and citrus aroma. Lots of chamomile and floral taste with lemon and orange. Light body moderate carbonation. Decent.

Bottle - hazy gold with pretty much no head/lace - nose is heavy with the adjuncts used, especially the chamomile and lavender - there is also some dusty yeast and moderate phenolics, lint musk - flavor is very sweet and heavy on the chamomile, with some dandelion as well - tastes like sweet herbal tea, really - strong honey flavors throughout - some grassy hops arrive late, along with moderate saison yeast rustic character, some dusty, earthiness - kind of disappointing.

Bottle... Clear, deep, mahogany pour with a small, creamy, white head. I canít smell much of anything here at all. Full-bodied with laid back carbonation. The flavor is sweet, port-like and boring. Any floral, herbal or spicy components are long gone. Not bad. Not good. Cleanly brewed, so thereís something.

355ml bottle. Pours a hazy clear with a one finger, white head that fades to a film. Aroma has big notes of candy sugar, bubblegum, farmhouse funk, a hint of tea, and sweet flowers. Taste is a bit tart but still with candy sugar and bubblegum. Mild sweet floral mixed with classic saison. Medium body and carbonation. Slightly syrupy texture with a bubbly carbonation/mouthfeel. Overall a pretty tasty brew. Solid, sweet Belgian flavours paired with sweet flowers.

Pours a hazy medium gold with head fading to a ring, moderate sediment, not much lacing. Aroma is strong and complex with fruits like apple, pear, lemon underneath tons of spicy yeast and herbal earthiness. Taste is big herbal with some of the pear and apple, a little soapy with the aromatics. Flavor stays big, but Iíd rather smell this one than drink it.

12 ounce bottle into tulip glass, bottled on 4/16/2014. Pours moderately hazy/cloudy bright gold color with a small dense white head with decent retention, that reduces to a ring of lacing. Slight spotty lacing clings on the glass, with some light streaming carbonation. Aromas of big lemon, pear, apple, white grape, light banana, lavender, chamomile, clove, black pepper, herbal, straw, grass, bread, and herbal/yeast earthiness. Very nice aromas with good balance and complexity of fruity/spicy yeast, herbal spices, and pale malt notes; with good strength. Taste of lemon, pear, apple, white grape, light banana, lavender, chamomile, clove, black pepper, herbal, straw, grass, bread, and herbal/yeast earthiness. Fair amount of herbal/yeast spiciness on the finish; with lingering notes of lemon, pear, apple, white grape, light banana, lavender, chamomile, clove, black pepper, herbal straw, grass, bread, and herbal/yeast earthiness on the finish for a good bit. Very nice complexity and robustness of fruity/spicy yeast, herbal spices, and pale malt flavors; with a great malt/yeast/spice balance and zero cloying flavors after the finish. Medium carbonation and body; with a smooth, crisp, and slightly herbal/bready mouthfeel that is nice. Alcohol is well hidden with minimal warming present after the finish. Overall this is a very good herbal spiced saison. All around well balanced and robust fruity/spicy yeast, herbal spices, and pale malt flavors; and very smooth and crisp to drink. A nicely enjoyable offering.

Gold pour, no head. Great aroma - fruits, herbs, floral esters, honey and yeast. Flavor is similar. Quite saisony- lots of spices and herbs... rose, lemon, pepper, notes of belgian yeast.

On tap at Cuginoís. It poured a hazy gold color with a white head. The aroma was spicy, bready, floral and earth. The taste was sweet with some spicy bitters, funk and earthiness.

Gold yellow cloudy pour some head. Aroma of lavender, bretta, tart, yeast, burly herbs. Tastes big saison yeast, solid herbs some pepper. slight acidity. slight dry could use more dry. I prefer Tíhofbrouwerijkís Sour Flower version of this. Itís basically the same thing, but also an awesome sour.
