For the first edition of the Stillwater Import Series I traveled to the village of Beerzel, located in the Antwerp province of Belgium. Here I teamed up with brewmaster Jef Goetelen to craft an authentic Belgian version of my liquid interpretation of the Spring season. A recipe originally contrived a few years prior as a collaboration brew with my good friend Paul Kretzer. The base is German barley & wheat, with a touch of Belgian aromatic; accented with grassy hops and an array of spring botanicals (heather, chamomile, lavender, & dandelion). Like a fresh meadow in spring. (now currently brewed at Two Roads in CT)

Dear at Top Hops. Clear orange. Off white head. Funky aroma, some fruity notes. Lots of funk overall. Super drinkable though it is a little bit funky.

12 oz bottle. Hazy gold with a decent off-white head. Aroma is herbal, floral, ginger, grain. Taste is of grain, hay, floral, spices, pepper.

Bottle. The smell is super herbal, florals, character, interesting, super flavors. Good. The look is mostly clear, white head, golden in color. The taste is the same, character, good.

@ Hatten 16-1-11: Tydlig örtig och blommig både doft och smak. Belgiska toner samt citrus är tydliga. Lite speciell.

Super aromatic of lemongrass, flowers, pepper sweet tarts. Strong forward assertive flavor. Tart and pretty decent. Not for the those that prefer subtleness.

How: Draught.
Where: All In Beer Fest 2015.
Appearance: Hazy amber colour with an off-white head.
Aroma: Cinnamon, spices, caramel, wheat, grapefruit.
Body: Medium body and carbonation.
Flavour: Spices, cinnamon, citrus, caramel, grass.

Bottle that made it into my glass and on the desk. The lavender is evident. Caramell, herbal, floral nose. Soup add cinnamon. Or just a general pot pouri. With all the spices I get more of a harvest/fall association rather than spring. It’s still a decent beer. I probably would not drink two and a row though because it’s a little sweet and the flavor is just overpowering.

Peach colored pour, no head but carbonation evident. Nose is a potpourri, but muted. Leans sweet. Middle is fresh soft fruit, sweet malt, sweet herbs. Finish dries and leaves with lavender riding shotgun. Enjoyable beer.

Draught at Bisq, 11/14/15.
Medium to medium light amber, lightly hazy, with an off-white head atop that is small and shows fairly strong retention.
Dough, big fruity esters (pineapple, peach) and some light cellar/mustiness all do signify a pretty solid Belgian ale base. Botanicals are well-controlled in the nose, with the earthiness of the heather and chamomile really complementing the malt and yeast. No alcohol, no flaws.
Was warned by the bartender that it was sweet, albeit not cloyingly so. I was very pleasantly surprised that, while it is certainly a step up on the sweetness ladder from the classics, it’s not overly sweet or too sweet by any means. Not to mention, this was never billed as any attempt to clone the classic saisons. Anyways, a medium to medium-full body displays mostly tight carbonation, lots of honey, touches of caramel and an earthy, drying effect from the heather and chamomile. Lavender and dandelion do not contribute any astringency, and most likely help the overall balance. It’s really not all that spicy, anyways, and there is a blurred line between the yeast derived esters and phenols and the spice-derived ones. A very interesting creation and quite flavorful and filling without coming off heavy or overdone. As some sort of spiced Belgian amber ale, I think it works very nicely.

On tap at All In Beer Fest. Fruity and flowery with a vegetabil aroma. Similar taste. Very flowery.
