COMMERCIAL DESCRIPTION
a ’Post Prohibition’ style ale brewed with Pilsner malt, corn, and rice.. hopped at 2lbs per BBL with Cluster, Northern Brewer, and Saaz.. and oh, yeah.. fermented with a farmhouse yeast and 3 strains of Brettanomyces (from our friend Chad at Crooked Stave) to weigh in at 4.5% ABV.. ’Always’ ;7

Lemon zest and horseblanket aroma. Cloudy yellow, thin head. flavor is the same as the aroma, but magnified. Superior balance, perfect level of funk. Finishes with just the impression of blue vein cheese.

UPDATED: FEB 25, 2012 Dusty hay and light pineapple nose with a touch of herbal hops. The taste is very dry, rather bitter and just lightly tart. Light pineapple, dirty dusty yeast, light hay, cobwebs and a touch of pear. Awesome stuff. If this ends up in cans, it will be epic.

750ml Bottle: Aroma of Brett, orange, coriander, and lemon. Poured yellow/gold in color with a medium-sized, creamy, dense, off-white head that lasted throughout. Cloudy. Very sparkling. Full of small particles throughout. Flavor is lightly tart, lightly sweet, and lightly bitter. Tastes of Brett, grains, hops, and corn. Light to medium body. Dry texture. Lively carbonation. Lightly sweet, lightly tart, Brett, hop, and grain finish is dry.

Keg at Brouwerij Lane, Brooklyn. Pours cloudy yellow with a moderate, white foam head. Refreshing, spicy, somewhat yeasty. Good beer.

Draft at Trappist in Oakland, slightly cloudy straw color. Band aid bretty aroma. Solid bitterness, dry Brett funk, band aids. Lots of complexity and flavor for a 4.5 beer. Nice

UPDATED: JUN 16, 2012 Tap at The Trappist. Pours glowing lighter gold with a thicker white, pillowy head. Big webby lace. Nose is heavy honey, sweet orange, tea herbals, mild urea, similar phenolics like Lost Abbey saisons. Perhaps over spiced. Taste is vinegary, salty, overly carbonated, stinging. Muted grass and decent hoppiness. Not too Brett heavy. Quite neutral overall. Very minerally like Centrum multi vitamin. 2/11/2012 7/4/7/4/15=3.7

651mL. Pours glowing starfruit with a large, sheen, pillowy, white head. Brett heavy nose, herbal, grassy, honey, cantaloupe. Taste is mega quenching, richer doughy biscuit, herbal/lavender sharpness. Has some small creamed corn DMS character like Prohibition style American lager. Very light and overpowered by intense dry herbals. Super refreshing and quenching. Demanding enormous gulps. Summer quencher. Can drink a pitcher of this stuff. Excellent. 6/14/2012 7/4/8/5/15=3.9

Bottle pours pale cloudy yellow with a thick pillow of white foam resting on top. Aromas of lemon, grain, and Brett funk. Taste is lemon, apple, cereal, with Hoppiness on the finish. Body is light to medium with lively carbonation. Overall, a great session ale with Brett funkiness.

On tap at Churchkey. Served in a snifter. Reviewed from notes. Pours a slightly-hazy straw color with a really nice white head and some good lacing on the way down. The nose brings a slight bit of grain along with some faint floral hops. Light earthy notes as well. The flavor has a nice grainy base along with good hop and yeast notes. The Brett shines through in the finish, which is quite dry. Light, crisp body. Really nice.

Draft at Churchkey. Cloudy yellow pour with a small head. Nose holds barn, orange and nectarine, bread, and uncooked dough. The flavor brings more of that saison combination of bread and nectar fruit, but with some beautiful rustic dryness. The palate is light to medium body, medium dry finish. Really subtle and delicate, but very very well done for such low ABV.
