COMMERCIAL DESCRIPTION
a ’Post Prohibition’ style ale brewed with Pilsner malt, corn, and rice.. hopped at 2lbs per BBL with Cluster, Northern Brewer, and Saaz.. and oh, yeah.. fermented with a farmhouse yeast and 3 strains of Brettanomyces (from our friend Chad at Crooked Stave) to weigh in at 4.5% ABV.. ’Always’ ;7

3/31/2012. From bottle. Pours cloudy golden yellow with a white head. Funky, yeasty aromas with hay, bread and light fruit. Tart and sour with fruit and herbal notes. Good stuff!

Bottle sampled at Cajun Cafe Fall Fest 2013. Pours a hazy yellow-orange with a white head. Nose is huge yeasty brett with hints of sweet malt. Flavor is big brett- tropical fruit, pineapple, barnyard, burlap, and sweet malt. Flavor finishes with fruity and barnyardy brett. Light to medium in body with lingering brett in the finish.

Bottle. Nice, light-colored pour, golden, opaque, with a big toppy head. The aroma is thick with intrigue ... big time brewer’s yeast up front, with a hint of tropical fruit lingering in the back. The beer drinks with a big mouthfeel, and the same characteristics in the palate ... thick, frothy bacterial yeast up front, with a bit of fruit lingering in the background. (#5320, 11/8/2013)

Room-filling typical brett aroma, floral, funky, strawy, hints of bubblegum. Taste is dry to bitter, minimally sourish, bretty, floral, minimally soapy, strawy; lively carbonation, light body.

650ml bottle, hazy pale-blonde hue, with a rocky frothy white head, nice mild funky, bretty yeasty nose, with some light lactic, juicy lemon, leathery, spicy herbs, sour pineapple, grapefruit fruity accents, with a floral grassy, leafy, citrus hop note in the aroma follows through on a medium-bodied palate with a nice funky, bretty wild yeast, vanilla, subtle sour milkyish, juicy lemon, grapefruit, zesty, spicy character, with some herbal flowery leafy, grassy, citrus hoppy flavours, with a rustic wheat, pale malt sourness, leathery undertone, well carbonated, leading towards a wild funky yeastiness, pineapple, grapefruit sour fruitiness, lingering leafy, grassy, citrus dry bitterness finish.

Light unclear medium yellow colour with a average to large, frothy, good lacing, mostly lasting, white head. Aroma is light moderate malty, light hoppy, soapy. IMO a quit weak aroam. Flavour is moderate sweet and light light acidic with a long duration, sharp, soapy, grass, yeasty, saison yeast, brett. Body is medium, texture is oily, carbonation is soft. [20130406]

Würziger, getreidig säuerlicher Antrunk. Wenig hopfig, deutlich bitter werdend. Die Bitterkeit steigt noch, das Bier wird trocken. Die Getreidigkeit lässt dabei nach, die Säuerlichkeit nimmt ebenfalls ab. Starke Karbonisierung. Zitrus, grasig. 13/11/8/11/11/11
