The Stillwater Sensory Series is a collaboration between Stillwater Artisanal and singular musical artists. In this first collaboration, Stillwater works with Lower Dens to make an ale based on an interpretation of their song, "In the End is the Beginning." On the bottle itself, a QR code will link to an exclusive Lower Dens performance of the song. Draught at CBC 2013. Hazy golden coloured with a small white head. Fruity aroma of hops, citrus peel and pine needles. Fruity flavour of citrus peel, pine needles and hops. Dry hoppy finish.

hazy pale blonde with white lacing. Dry, savoury, marmite, yeast esters and black pepper on nose. Moderate carbonation, light, floral, custard, touch of vanilla maybe slightly oxidised papery.

Bottle. Golden pour with white head. Spice, yeast and sweet aromas. Light citrus, yeast, herbal and spice flavors. A little over carbed, otherwise very nice.

A floral ale not a million miles removed from a saison. Quite a subtle beer and very sessionable. Intriguing appearance: pale gold with extremely busy champagne-like carbonation and a fat head that stayed better than Phar Lap. Unsurprisingly, the aroma is decidedly floral - hibiscus, presumably, although my knowledge of flora is half-baked at best. Very grainy, almost wit-like, with some Belgian yeasty notes. The nose is too restrained to really excite the senses. Medium-bodied and soft in the mouth - not at all prickly considering the visible bubbles. Very rounded flavours - grains, violet candies and faint dried fruit with just a hint of sourness and blue-cheese funk to disrupt what might otherwise be a tad bland. Artisanal indeed. 375ml bottle pours hazy dark orange with a finger of head. Nose is musty bready grain, yeast spice, apple, floral citrus. Taste is bready malt, grain, white wine, apple juice, light spice, soft yeast. Finish is dry bready malt, yeasty spice, white grape juice, apple. Ok I guess, but I donít really know what this beer is trying to be. Underwhelming.

Bottle to IPA glass Celery, apricot, peat, lemon, green apple or cider, and funk. Amberish yellow with a bright white frothy head with lots of lacing. Wheat, cider, grass, and funk. Well, thatís smell, sight, touch and taste done, and throughout, Iíve been listening to Lower Dens. A bit strange...but that wonít affect my beer rating.

375 ml bottle from Premier Gourmet. Pours a murky dull golden colour with large, dense white head. Aroma is effervescent fruitiness, flowers, light spice and grains. Flavour is quite fruity with apples and berries, lots of floral character, grains and a little hibiscus and white pepper. Lively carbonation. Interesting one.

375 ml bottle into tulip glass, no bottle dating. Pours lightly hazy/cloudy bright gold color with a 2-3 finger fairly dense and fluffy white head with good retention, that reduces to a nice cap that lingers. Spotty foamy lacing clings around the glass, with a large amount of streaming carbonation retaining the head. Aromas of lemon zest, pear, apple, white grape, black pepper, hibiscus, wheat, cracker, herbal, grass, and yeast earthiness. Very nice aromas with good complexity and balance of fruity/spicy yeast, pale malt, and hibiscus/hop notes; with good strength. Taste of lemon zest, pear, apple, white grape, black pepper, hibiscus, wheat, cracker, herbal, grass, and yeast earthiness. Moderate yeast spiciness on the finish; with lingering notes of lemon zest, pear, apple, white grape, black pepper, hibiscus, wheat, cracker, herbal, grass, and yeast earthiness on the finish for a good bit. Very nice balance and complexity of fruity/spicy yeast, pale malt, and hibiscus/hop flavors; with a great crisp malt/yeast flavor balance and zero cloying flavors after the finish. Medium-high carbonation and medium bodied; with a very smooth, crisp, and fairly prickly mouthfeel that is great. Alcohol is well hidden with only a slight warming present after the finish. Overall this is a damn nice spiced saison style. All around good complexity and great balance of fruity/spicy yeast, pale malt, and hibiscus/hop flavors; and very smooth and crisp to drink. A very enjoyable offering.

Bottle. Pours a slightly hazy dark gold body under a one finger fizzy white head that had decent retention due to the vigorous carbonation. The aroma is fairly floral with some wheat and a little yeastiness. The hibiscus is certainly there, but itís not quite as fresh and huge as it might have once been. The flavor is more towards the wheat and yeast up front, but the nice delicate hibiscus floral flavor dominates on the finish. Pretty nice beer, the flavors are fairly complex, yet it comes across as fairly simple in itís entirety. Lighter bodied with fizzy prickly carbonation. Interesting beer.
