Aroma: yeast, light citrus fruits, maybe some apricot, some straw, pale grain malts. Appearance: hazy, dark gold, medium, frothy, white head. Taste: light bitter. Palate: yeast, grain and bread malts, light citrus fruits again, straw, bitter finish. Overall: decent Saison, very solid, nothing too unexpected though. Pint at Kings Arms, Bethnal Green.

Stateside Saison has a fairly thick, off-white head, a mostly hazy orange-gold appearance, some bubble streams, and lots of powdery and not-so-small tan yeast chunks, suspended, throughout. The aroma is of sugary, spiced, white bread, pears, and a bit of brettanomyces. Taste is of those elements, low bitterness, and the white pepper note becomes increasingly prominent, and a bit unpleasant, actually. Mouthfeel is medium, and Stateside Saison finishes semi-dry. RJT

April 20th, 2014 - Saisons are flexible, fungible, and run a whole menu of flavors across the style. Stillwater Artisanalís version tilts towards the Tripel side, in scent and taste, pushing heavy doses of yeast, appetizing and microbial. The wheat aspect in the nose is strong too, but second fiddle to the banana esters that so strongly correlate with the presence of Belgian yeasts. The carbonation is soft and accommodating, delivering more of the banana esters into the flavor, ripe and sweet, and with just the tiniest dose of sulphur, adding an interesting counterbalance. The sweetness has a delicate touch, ephemeral, and hard to pin down, and this is where I refer to the Tripel style, with its often subtle touches of banana, clove, vanilla and custard. All these are somewhere in the background of the flavor of the saison, but more like shadows or contours, leaving me, the drinker, to guess the shape.

Faint sour Belgian malt aroma. Complex notes of fruit and grain in the body that finishes with grains as well. Great saison.

Stillwaterís Stateside Saison captures the essence of so many lovely things. Malty sweetness, earthy yeast, American and New Zealand hops that are spicy, floral, and tropical. Sweet/sour, juicy/dry, funky/smooth. Stateside Saison plays with all these paradoxical dynamics. The end result is a really well-rounded Saison. So far this is the most straight-forward and predictable brew Iíve had from Stillwater, but itís highly drinkable, thanks to its superb balance.

Appearance: slightly hazy pale gold with a short, short-lived white head diminishing rapidly to nothing, no lacing. (3/5) Aroma: stone fruit, apples, grassy funk, bready yeast. (7/10) Taste: moderate-low sweet, mild bitter, mild tart. (7/10) Palate: medium body, moderate-high carbonation, bone dry moderate bitter and mild tart finish. (3/5) Not sure what the relationship is between this and Cellar Door, but in my opinion this suffered by comparison to Cellar Door. Itís still a nice saison, but doesnít have the depth and complexity of Cellar Door. The finish is also dryer but a bit harsher, and on the whole it just doesnít feel as well put together. Good, not great. (14/20)

Pours a cloudy yellow golden color with fizzy white head. Citrus, coriander, other spice, yeast/bread and some light floral notes on the nose; follows onto the palate. Light bodied. Finishes with wheat and coriander.
