COMMERCIAL DESCRIPTION
India pale ales harness the inherent flavor characteristics of hops to bring forward familiar flavors of pine, resin, spice and citrus. In some cases, those botanicals are so potent, they exactly mirror specific edibles. Such is the case with Centennial hops, which hail from the Great Northwest and come across on the palate like a mouthful of citrus fruit. The sensation is amplified with this, the first beer introduced via the Stochasticity Project, a double IPA brewed with Centennial, Chinook and Magnum hops as well as an immense dosing of fresh grapefruit peel. The result is over-the-top bittersweet grapefuit intensity that is at once refreshing and bracing in its citrusy bitterness.

Lightly hazy deep gold beer, good fluffy pale cream coloured head. Palate is airy and softish, very fine carbonation. Soft creamy malt, sweetish. Lovely resinous pine hops. Floral orange and lemon and indeed a little grapefruit zing. Touch of sherbet. Hops spice towards the smooth finish. Very nice indeed. I’d forgotten this was a Stone beer and was looking for this great new Stochasticity brewery! Duh!

Bomber from The Davis Beer Shoppe. Pours amber gold with a beige head. Serious complex hop aroma. Nose burn! Full bodied or nearly. Damn but this is hoppy. Boston Beer should try this before another attempt at a West Coast IPA(check SA Rebel). There’s firm caramel backbone, but a lot of hop has to move before it shows up. It’s juicy citrus. Serious hop in the mouth. So much so it’s behaving as astringent. Grapefruit zest is serious stuff. Farking fantastic.

On tap @ GABF. Golden pour with a white head. Really nice grapefruit nose. Pine, candied orange, some caramel, and a very dank, resinous hop character. Flavor is somewhat sweet with some caramel malt. Tons of bitter pine, big grapefruit zest, and some candied orange peel.
