COMMERCIAL DESCRIPTION
It’s a saison of sorts; hellaciously herbaceous and hopefully contagious. This was not a ready made ale. But it is a ready made collaboration. Meaning Stone and Victory are 2 breweries that are exactly like Dogfish in that they do/brew exactly what they love and they do/brew it exactly like no other brewery out there. (Love - lots of it in this bottle)

-Samuel A Calagione

Ale brewed with parsley, sage, rosemary, and thyme.

2015 BJCP Category: 25B Saison

AROMA: Strong spicy/herbal aroma. Additives probably a bit too strong per guidelines. Citrusy hops. No malt character. 9/12

APPEARANCE: Amber/pale orange hue. Cloudy but translucent; Co2 visible. Large, white, frothy head; very good lacing. 3/3

FLAVOR: Dry spicy bitterness immediately. Akin to rye. Soft malt character at palette’s base. Orange-tasting hops come through at apex. Finish is a melange of spices: parsley, sage, rosemary and lemon thyme. Spices are probably a bit too strong per guidelines, but still quite enjoyable. 16/20

MOUTHFEEL: Medium+ body; crisp and consistently effervescent. Finish is mostly dry with some spicy/citrusy aftertaste. No alcohol presence. Not refreshing but easy to drink. 4/5

OVERALL IMPRESSION: A delectable, unique and fun beer. May be a bit too unconventional for the style (would score even higher in 30A). 8/10

TOTAL SCORE: 40/50

Pours a pale golden yellow with a thin white head. Aroma is a nice blend of lemon and herbs. Flavor is pretty similar. The rosemary and thyme stand out. This is quite bitter, much more bitter than I remember Dogfish Head’s version being. It could be that it’s been a long time since I had Dogfish Head’s version, but it could also be that this is Stone tends more towards the bitter side. This is a very enjoyable beer, even if the bitterness does feel out of place here.

Draft pour at Upstairs. Pour was cloudy golden amber with slight head. Aroma of fruit. Taste of fruit (various non-citrus) and hops (citrus) with little bitterness. A very good drink!

Aromas of horseblanket, wheat, lemon citrus/grapefruit zest, sage/thyme. Taste is straw, citrus, thyme, then sage/Rosemary and wheat. Some sweet doughy malts appear in the middle and the finish. A last burst of spices appear before I swallow. Then an after taste of grapefruit rind.

Herbal notes are very well-paired with saisons I find. This one is no exception. Nice licorice-y and piney notes from the parsley and rosemary. Very quaffable. Very good beer.

ARH (1093) - Chicago, Illinois, USA - MAR 30, 2016
UPDATED: MAR 31, 2016 12oz bottle, poured into a shaker. The aroma is a notable pepper and lemon with some doughiness. It pours a sparkling pale with a white foam that leaves moderate head medium lace. There’s a medium, muted sweet and medium light bitter. The texture is thin with fizzy carbonation and a light body that mostly herbal upfront with light, dry citrus and a finish that’s dry peppery and herbal with a cloying, bread note lingering.

Pours a slightly hazy golden color with white head. Spices, fruit and floral aroma. Sage, parsley, thyme, rosemary, pear, apple, peach and floral flavors. Medium body and carbonation. Spice and fruit finish. Too much spice takes away from the beer.

Hazy yellow with white head. Aroma is lemon herbal and grassy. Flavor is rosemary thyme, slightly sour, hint of sweetness, fresh herbs and pepper, lemon citrus. Very pleasant herbal finish. ---Rated via Beer Buddy for iPhone

Cloudy blonde with a little white head. Herbal aroma. Some citrusy bite, but mostly a bold, spicy brew. Pretty good.

Clear golden color, moderate head, good lace/retention. Aroma is strongly spiced - very herbal with sage and rosemary. Medium bodied, big herbal flavors. Some citrus present as well, but I still haven’t bought into Saisons that load up spices without regard for balance.
