It’s a saison of sorts; hellaciously herbaceous and hopefully contagious. This was not a ready made ale. But it is a ready made collaboration. Meaning Stone and Victory are 2 breweries that are exactly like Dogfish in that they do/brew exactly what they love and they do/brew it exactly like no other brewery out there. (Love - lots of it in this bottle)

12 oz bottle from Total Wine in Tucson, served in a branded snifter next to the Dogfish Head version. Pours hazy amber with a huge, fluffy off-white head that remains and laces well. The nose has big notes of grass, rosemary, sage, thyme, pepper, yeast and a touch of lemon. The flavour is mildly sweet with a moderate spicy note that takes over in the middle and lingers through the finish. It is spicier than the Dogfish version, with a rounder, more complex spiciness. The finish is long and peppery-spicy with perhaps cinnamon and a moderate herbal quality. On the palate it is medium in body with a dryish texture and intense carbonation. Overall, this is quite a nice Saison with complex spice and elegant herbal notes. I preferred this one slightly to the Dogfish Head version. 2013-12-10

Had this back in December 2012, bottle from Asahiya. Here’s what my notes say: A nice clear golden beer with a good head of foam & nice lacing. The first sip is very floral with a bitter bite. The herbs definitely come through with sage & thyme being noticeable. This beer grows on you.

Had this at the RB Pgh Halloween Spook-tacular Tasting/Drunkfest fall 2013, nice time at Hornydevil’s place, thanks James & Michelle! For this sample I hand my hat to mtoast, thanks Hart! 2010 bottle. Smells old from the bottle. Has a pretty good level of co2 initially. Leaves a little bitof a medicinal feel to the palte. Odd flavor, difficult at times. Simple yellow color. Just seems a bit cardboard to me.

Beerenberger (1564) - Fischer, Texas, USA - SEP 23, 2013
Herbal aroma of rosemary and thyme, as well as some citrus notes. Pours a hazy yellow with a white ring and minimal lacing. The taste is strongly, but very nicely, herbal. Rosemary, thyme, pepper, citrus with hints of grain/ bread in the dry finish. Medium-light body and crisp carbonation. Oveall, very surprising and very enjoyable. I’d love to try it with food.

Aroma is spices/black pepper, citrus and a hint of earthiness. The flavor is spices, citrus, mild heat and a tangy/malty finish.

2012 bottle to tulip I can smell the herbs; rosemary first off and then the sage. I'm going to guess that the thyme side is as well but I can't place it, likely due to my low familiarity with thymes aroma. I also get a lot of mint, lemon, and ginger. Nice clear amber with a thick white bubbly head that reduces to a thin ring. The taste is gingery, quite strong, fairly overpowering the other flavours. I get rosemary and wheat too.

12/09/2010: Stone Saison du Buff... Aroma: Vibrant herb aroma that showcases the rosemary; also hints of spicy floral hops. Appearance: Hazy, pale gold color with a really large head of dense, rocky, and long-lasting biege-colored foam; good level of visible carbonation if not a bit on the higher the necessary judging by the huge head; splotchy, puffy lacing. Flavor: Really nicely balanced; light maltiness quickly overtaken by rosemary and dried thyme, citrus, and even some juniper or spruce; spicy, peppery finish with more herbs (curly leaf parsley, thyme) in the lingering aftertaste; nicely hopped with a moderate amount of soapy floral and spicy bitterness. Palate: Medium-bodied; surprisingly smooth and not over-carbonated at all; nice mouthfeel. Overall: I really enjoyed the DFH version of this beer and like this one just about as much; no me, this is what a good Saison should be like!

Three style pushing breweries creating an American Saison- sounds good! The aroma is a herb bomb with big rosemary and thyme notes. The taste brings a nice saison spice along with big herbal flavor. At the end there is a warming from the alcohol and some dark fruit. Overall, not a beer I would drink everyday, but a great example of what all three of these breweries are all about. ---Rated via Beer Buddy for iPhone

This is a weird one. It smells very aromatic with Italian spices. It pours like a nice Belgian White with a thin head. Man, that first sip packs a PUNCH! And it's not a really pleasant one. Bottle. Took me some time to filter between the other 2 collab entries. Alas, I'm rating the 7.7% DFH/Victory/Stone. Pours a clear gold with suspended particles, and a frothy egg white cap that reduces to a doily of airy bubbles with decent lacing. Aroma is A LOT of sage, with the "sweet" spice of thyme/rosemary, and orange & lemon citrus. Taste is a blend of spices, mostly basil and citrus zest. Delayed, long, dry finish. Pretty interesting.
