COMMERCIAL DESCRIPTION
It’s a saison of sorts; hellaciously herbaceous and hopefully contagious. This was not a ready made ale. But it is a ready made collaboration. Meaning Stone and Victory are 2 breweries that are exactly like Dogfish in that they do/brew exactly what they love and they do/brew it exactly like no other brewery out there. (Love - lots of it in this bottle)

Clear golden color, moderate head, good lace/retention. Aroma is strongly spiced - very herbal with sage and rosemary. Medium bodied, big herbal flavors. Some citrus present as well, but I still haven’t bought into Saisons that load up spices without regard for balance.

12 ounce bottle into tulip glass, bottled on 2/18/2016. Pours lightly hazy/cloudy golden yellow color with a 1-2 finger fairly dense white head with good retention, that reduces to a thin cap that lingers. Nice spotty soapy lacing clings around the glass. Aromas of big lemon, lime, apple, pear, rosemary, thyme, sage, parsley, peppercorn, wheat, cracker, bread, herbal, floral, grass, and yeast earthiness. Very nice aromas with good balance and compelxity of fruity/earthy yeast, spices, and light-moderate bready malt notes; with great strength. Taste of big lemon, lime, apple, pear, rosemary, thyme, sage, parsley, peppercorn, wheat, cracker, bread, herbal, floral, grass, and yeast earthiness. Moderate herbal bitterness and yeast spiciness on the finish; with lingering notes of lemon, lime, apple, pear, peppercorn, spices, herbal, grass, and yeast earthiness on the finish for a good bit. Very nice complexity, robustness, and balance of fruity/earthy yeast, spices, and light-moderate bready malt flavors; with a great malt/bitter/spiciness balance and zero cloying flavors after the finish. Moderate dryness from bitterness/yeast spiciness. Medium carbonation and light-medium body; with a very smooth and fairly sticky/grainy/bready balanced mouthfeel that is nice. Alcohol is very well hidden with minimal warming present after the finish. Overall this is a very nice spiced saison style. All around good complexity, robustness, and balance of fruity/earthy yeast, spices, and light-moderate bready malt flavors; and very smooth and easy to drink. A very enjoyable offering.

Aroma of lemon, spices. Appearance of golden clear with lite head. Flavor is grassy, herbal and lemon. Medium mouthfeel. Slightly dry.

The aroma is very sweet, all of the herbs come through to make it smell like chamomile, slight citrus, no funk. Appearance is golden, slight haze, white head. Taste is more to my liking, slight herbs, but rustic, citrus, dry, slight yeast. Mouthfeel is light to medium body, crisp carbonation, lingering lemon peel hanging out. Overall, the aroma is atrocious but the herbs only play a subtle role in the taste. Thus, it’s drinkable.

The herbs come through in the aroma nicely without any astringency or unpleasant bitterness. Almost pepper spicy heat in the finish. Good beer.

On tap at Butcher and the Boar in Mpls. Amazing spicy herb aroma. Some good barnyard funk but a lot of spice in this (not hot, just herbs). A bit sweet on the finish - overall really nice.

Bottle from SJ. First thing I noticed was the blast of lemon, followed by Straw, flowers and grapes. Not a bad representation of the style.
