COMMERCIAL DESCRIPTION
It’s a saison of sorts; hellaciously herbaceous and hopefully contagious. This was not a ready made ale. But it is a ready made collaboration. Meaning Stone and Victory are 2 breweries that are exactly like Dogfish in that they do/brew exactly what they love and they do/brew it exactly like no other brewery out there. (Love - lots of it in this bottle)

-Samuel A Calagione

Ale brewed with parsley, sage, rosemary, and thyme.

Bottle:   Straw in color, slight haze, large frothy white head, nice lacing.   Huge nose of sage and pale citrus notes.   Also has a kool-aid candyish sort of aroma.   Not artificial, but very floral and candyish.   Not as floral or citrusy on the tongue, but its spicy with some sage and thyme in the background.   Moderate body and mouthfeel.   Body and mouthfeel are full to moderate.   Not bright floral, but bright spiciness.   Unique, very spicy, lots of sage, make that tons of sage.   Interesting, and a very different type of Saison.   Points for uniqueness.

Nose is straight from the herbal garden with rosemary and thyme noticeable along with honey. Taste is sprightly with herbal tones that permeats everything along with honey, grass and spring rain. Very nice! ---Rated via Beer Buddy for iPhone

Very nice! Flavors wash over the palate in continuously changing waves that ping several different tastebud grouping on the tongue. I get herb (mostly parsley), barnyard (saison-appropriate yeast), light earthy malt, citrus peel and flowers (hop element). I think there are esters hiding in there (indicated by a faint stickiness on the palate by the end of the pour), but too much else is going on for me to notice or care. Yum yum, I love it! Happily receiving 6-packs of this on my birthday, note to the reader. Cellaring note: purchased in-season in 2012, this was cellared under partially appropriate and partially inappropriate temperature conditions, so I was a little worried about how it had aged. Whatever perfect cellaring may have done, the brew didn’t seem to have suffered much.

Pours light gold and crystal clear with a thck white head. Aroma is lemon, grapefruit, and yeast. Taste is amazingly complex. Taste is initially licorice candy or is it sassafrass? Sweetness comes in the mid palate followed by deep hoppy bitterness. The first taste is shocking in its uniqueness and the flavors just keep transforming.

12 oz. bottle- Pours hazy golden with a thin white head that reduces to a collar. Aroma is strong in rosemary thyme and sage. The taste is the same, only much more complex, those spices are at the forefront, but there is the whole Belgian Ale thing going on in there as well. Body is medium and carbonation is fairly high. Overall I would have a hard time comparing it to the other version of this I have had, the Dogfish one, I drank that a while ago, but this is good, just not great.

12oz bottle. Pours a hazy gold color with a big fluffy white head. Strong aroma of grassy hops and rosemary. Spices are definitely more pronounced in the Dogfish version. Taste is herbal, sweet belgian yeast, slightly citric, with mild grassy hops.

Bottle: Light peach color, hazy, small white head. Grainy nose, herbal, and spicey. Too much mint is detrimental... Taste is potent; orange zest, more mint, and dandelion. Very herbal and spicey... over the top really. Way too much so for this guy even though I wanted to like it.

A - Pours a hazy light golden brass. Small head that dissipates quickly. S - Lots of fresh cut herbs-oregano, rosemary and grapefruit. Tangy yeast. T - Bright fruit - strawberries and apples. Has some soft spice mixed with garlic notrs. Prickly hop bitterness. Tart honey hay. No funkiness. A very sharp and crisp beer. Strange for the style. Very herbal and quite refreshing. Good drinking but probably wouldn’t seek this out. Serving type: on-tap 10-05-2010
