COMMERCIAL DESCRIPTION
It’s a saison of sorts; hellaciously herbaceous and hopefully contagious. This was not a ready made ale. But it is a ready made collaboration. Meaning Stone and Victory are 2 breweries that are exactly like Dogfish in that they do/brew exactly what they love and they do/brew it exactly like no other brewery out there. (Love - lots of it in this bottle)

-Samuel A Calagione

Ale brewed with parsley, sage, rosemary, and thyme.

thanks to Dionysus! Gold pour. small head. Aroma of parsley, sage, rosemary and thyme! Mostly parsley. Flavor is lemons, parsley and sage. Interesting beer and would be a great food beer.

Bottle... Lightly hazy golden ale with a mid-sized, creamy, white head that never fully dissipates. The nose is big-time herbal – rosemary, sage, fresh basil and white pepper… smells like my wife’s herb garden. Medium-bodied with a mildly oily mouthfeel and prickly carbonation. The flavor offers sweet pale malts, freshly boiled herbs and ballsy hop bitterness. Herbal, bitter, drying finish. Refreshing and unique. Kick ass saison. Bottle courtesy of giarcsr!

UPDATED: OCT 6, 2011 Bottle @ home. Light yellow-orange body with a medium off-white head. Huge floral, lightly piney, slightly soapy hoppy, light belgian yeasty, lemon aroma. Floral, lemon, belgian yeasty flavor with a tangy, soapy finish. The first time I had this series, I really didn’t like the idea of over hopping a saison but it’s truly not as bad as I rated it.

Tap at Neighborhood. Very pale golden pour. The nose is very floral. Lots of lavender and elderflower. Bright and lightly lemony with some other bright spicy aromatics. Light wheatiness in addition to the other pale malt. Very fresh and bone dry. A touch of light black peppery spiciness. Some lightly prickly ethanol on the back but it accents the dryness of the finish. Lingering spiciness on the finish. Very floral and spicy – which I happen to like a lot.

Bottle at Cole’s, Mike’s private collection. Great lace on light body. The aromas are a delightful, funky and fresh. More complex as I drink it, and that has to be done sip by sip. The herbs lead to a soup of tastes, still lemony and bitter, with white paper and the rosmary and sage. Above average mouthfeel and approachable by averge

12 ounce bottle from Beer Run in Charlottesville, VA. Pours a slightly hazy golden color with a large frothy white head. Good head retention and lacing. Aroma of caramel, candi sugar, pineapple, peach and lots of other fruit notes, and lots of spiciness including primarily sage and rosemary. The taste is bitter spicy notes, primarily thyme, caramel, pineapple and peach. Medium bodied. Interesting beer.

355mL courtesy of PeteinSD. Pours a clear yellow with a very rocky, lively, off-white head with excellent sheety lace. Aroma is outstanding: fresh citrus hops, potpourri, orange juice, lively summer herbs, the sage really dominates. Taste is very herbal, some medicinal qualities, almost like mint toothpaste (no- I did not brush my teeth before trying this). Dry on the palate. Pretty good. The nose is really the best part and everything else is a little disappointing.

this is not how you do saison. saison needs a belgian yeast strain that produces vibrant spiced fruit esters and phenols, not a bath soap mess of a strain that smells and tastes like perfumed milk. saison needs proper bottle conditioning. saison does not requires a rough malt texture. and for damn sure saison does not need parsley, thyme, rosemary or sage. what a god damn shame.

Stone bottle (but with Bill’s spiel on the back). Pours with a nearly clear golden body and a small white head. Aroma of herbs and dryness. A decent amount of grapefruit/herbal hops as well.Thyme and rosemary stand out. Some citrus zest. Taste is bitter and dry. Very bitter. Nice grain and toast aspect. Herbal. Grape skins. Some grassy aspects. Light body, lively, bitter.
