Nov 9, 2007 Bottle from SL. The pour was hazy golden in color, initial head that faded quickly. The aroma was firm strong bananas and cloves, wheaty elements, like a hefeweizen. The flavor was rich and full hefe, imperial hefe-like, a little too sweet for my likings, although the body was thick or syrupey. I also wanted some saaz action, but maybe I’m wanting too much.

Nov 3, 2007 golden with off white fizzy head. slightly spicy, yeasty aroma with an alcohol component. Flavor is not as robust as it could be. Slightly thin and lacking in complexity. Rather noticeable alcohol in the flavor. Overall, an average tripel.

Nov 1, 2007 2006 12-oz bottle. Pours deep peach colored, cloudy and chunky, with a modest white head that dissipates to splotchy coverage. Soft aroma of cloves, sweet dough, and a complex mix of undefinable fruity esters...both citrusy and banana notes come through. The flavor is complex, mild and tasty. Fairly sweet overall, but pretty balanced with a modestly dry finish. Extrordinarily smooth, medium-full palate with moderately high tingly carbonation. Warming but not alcoholic. This is a fine tripel and much better than I expected.

Oct 28, 2007 12 oz bottle-poured a cloudy golden color w/a moderate bubbly white head. Good, sweet, Belgian aroma. Classic Belgian flavors, bread dough, cane sugar, banana, & spice. Rich full mouthfeel. Good example of this style, particularly for an American Brewer, who often seem to have trouble w/this style. Alcohol was well hidden.

Oct 19, 2007 Trappist glass. Thin head dissipated quickly. Very little lace. Deep hazy gold in color. Nose of bread, yeast, fruit. Spicy flavor, with a warm finish. I really like this one.

Oct 12, 2007 12 oz. bottle via trade with jasonmech77 - Pours a slightly hazy golden color with a one and a half finger thick white head. Nice lacing. Aroma is yeast, bread, esters (banana), and light spice. Flavor is fruity with an almost cloying malt sweetness and a touch of alcohol. Medium body. A good beer. Thanks Jason.

Oct 5, 2007 12 oz. bottle. Pours copper, a few shades darker than I was expecting for the style, with a thin beige head. The aroma is pear, peppercorn, some berries, honey, alcohol, and caramel. Flavor is a bit caramelly (again not what I would expect from the style) with some sharp carbonation. There are woody and malty notes throughout. Yeasty banana notes come out in the finish. Decent Belgian-style ale.
