American trippels constantly disappoint me and this one disappointed maybe a little bit less than most. Some decent spice and fruitiness, with mid-to-high level sweetness. Cotton candy blends with spicy cloves, bret-like yeast, & soft flowery pepper. Dry chalky palate with some tannins, leather and hints of iron as the liquid closer to the dregs is poured in. I love how this one gets funkier as I move through the bottle: yeast blends with slightly metallic components, sourdough and even some horse-blanket, wow! Cloudy orange appearance with a thin off-white head. Banana, clove, and citrus aroma. Clove is abundant in the flavor profile, with banana holding ground in a distant 2nd place. The head fades, but not too quickly and not quite completely. The aroma is very fruity (slightly dried stone fruit) and a bit of nuts (walnuts?). Now, gather round children....This beer looks so fantastical that I was astounded by it. I held it up to the light and it could not break through. The head was large and powerful and remained for a long time. I tried to get as much yeast and sediment off the bottom, and yet, despite failing that, the clouds within this brew were so layered and huge that it looked like a picture of the planet Jupiter. After 2 minutes resembles freshly pressed cider.
Delicious, complex taste I would expect from any quality dubbel or tripel. You can feel, but not taste the alcohol. Stoudts has absolutely blown me away.
