This is the regular Straffe Hendrik Tripel, but this time fermented with wild Brettanomyces yeast strains.

ivorywhite head fades fast no lacing. darkyellow colour. aroma is metallic, boozy, caramel, vegetal (where is ze funk?). taste is sugar, caramel, boozy, peach, vegetaal and mushrooms aftertaste slight bitter. no funk in this house. medium body and carbonation. ik word er niet wild van. bottle 33 cl / bbf feb-2019

Interesting brew. Nice Tripel with saisony brett qualities, lemon, berries, some dried fruits, nice malty background, caramel. Light sweet with light tartness. Well balanced. Enjoyed

A cloudy, slightly brown / darkish honey colored beer with a nice, fluffy white layer of foam. Is has a sweet, syrup-like aroma, but also with a sour touch. The sour part moves on into the taste, accompanied by a nice, subtile bitterness. The sweet part returns in the aftertaste for just a second. Een troebel, lichtbruin / donker honingkleurig bier met een mooie, schuimige witte kraag. Het aroma is stroperig zoet, maar heeft ook een zurige toets. Het zurige maat mee in de smaak, vergezeld van een aangename bitterheid. Het zoete, stroperige komt heel even terug in de nasmaak.

2015. Pours golden orange with a big and frothy head. Aroma of citrus, grass and fizzy candy(?). Full body, creamy feel, lively carbonation. Taste of cherry, spices, yeast and alcohol. Bitter and hoppy finish.

330 ml bottle “2015” bought at YATA in MOKO, Mong Kok.

Looks: Clear light amber colour with a ring of dirt-like yeast sediments; Two finger head with lasting crumpety off-white foam; Beautiful sticky lacing with quite fizzy carbonation.

Aroma: Very fragrant and sour malt, with strong Brett, funk, barnyard, strong spices, vinegar, sour cherry, red grapes, red wine, dry sherry, bread, strong Bel yeast, lemon and light grass. Wow!

Taste: Mid to strong sweet rich malt, with strong metallic, strong cherry, strong alcohol, strong liquorices, strong funk, barnyard, spices, sugar, caramel, strong Bel yeast, herbs, strong lemon, very strong bitter hops and sharp grass.

Body: Full body. Very slick and creamy palate.

Mouth Feel: Wholesome maltyness in a rich and very smooth background. A lot hoppier and boozy than the original Straffe Hendrik Tripel. The funky Brett is very strong, spicy and overwhelming which buried virtually all the original Bel fruity ester, in comes the pretty classy cherry liquors, cream and very herbal bitterness, which balanced the strong but right-on sweetness. Strong lemon to round. Excellent!

Hoppiness: Lemon and light grass in nose. Herbal, strong lemon and sharp grass in taste; Bitterness is very strong for a lasting, very high astringent funky malty finish.

After Taste: Quite dry. Creamy, funky and strong bitter-sweet to mouth.

Comments: The Brett refermentation really turns the original Straffe Hendrik Tripel into a damn fine article – strong Bretty funky aroma with classy cherry liquor and winey, sherry flavour like a Flanders Brown, without losing its rich maltyness and creamy palate. I wouldn’t mind the trade-in of the usual Bel yeasty esters from the original Tripel, this ”wild” is simply dynamic and fantastic. Definitely a must buy for cellars!

2016. Deep golden, orange color, clear. Massive white head, definately over carbonated. Beautiful aroma. On a first plan notes typical for brettanomyces. Horse blanket, stable. In the back a bit more malty, sweet notes, with delicate touch of alcohol. Fortunately in the mouth it feels rather poorly carbonated, which is definately for the good. That makes the mouthfeel even more thick and dense, you can feel the strenght of this beer. Taste has the same notes as aroma with addition of some tart wine. It feels dry because of the brettanomyces, but there really is quite noticeable malty back. Awesome beer, great wild tripel concept.

Bottle, tak til Bob. Clear golden with a large frothy off white head with good retention and lace. Flowers, spices, citrus and white pepper in the nose. Lively carbonation. Flavour has lots of barnyard, hay, white pepper, citrus. Medium body, little sweetness, medium bitter. Dry funky finish with light hot alcohol.

Bottle - Sweet funky stone fruit. Clear gold with a rich white head. Boozy and perfumy with funky stone fruit and very effervescent. Sweet and sticky with a nice taste. Well done.

Pours hazy amber with medium fizzy head. Aroma is funk, sweet aprcot, apple cider, barnyard. A bit too sweet, not enough wood and sour for my taste. Medium body, oily texture, lively carbonation.
