Bottle. Look: Amber, thick off white head. Smell: Citrusy hops, some candi sugar in the background. Simple but nice. Taste: Dry choclaty taste with some serious bitter hops in the aftertaste. Overall: Nice barley wine that reminds me of Bigfoot.

12oz bottle. pours hazy amber with tan head. nose of grapefruit and pine. flavors are caramelly, oddly grainy, sugary, grapefruit, and floral. alcohol is well hidden. really nice pnw hopped aroma, it doesnt taste bad but the flavor just doesn’t match the aroma. tasty brew! good work guys.

Bottled. Hazy brown color, short head. Aroma of hops, bit fruity, vinous, malty. Liquorish taste, fruity, malty, bitter. Ok stuff.

Bottled. Aroma is hoppy, fruity and winey. Hazy, amber-brown coloured beer with a lasting head. The taste is bitter, has maltiness in it, piney hops and is a bit winey/sherry like. Bit fruity. Medium-full bodied. Nice mouthfeel/palate. Good beer, but perhaps some aging will do the beer good.

Bottle. Murky brown color. Vinous aroma with raspberry and strawberry. Alcoholic, oaky flavor with hints of sherry. Loads of oily, earthy hops. Abrupt transition between the fruity and vinous aroma and the harsh oily and earthy hopflavor. Will this marriage improve with cellaring? Time will tell...

Bottle at avlinne and the struise farm Iv got another two bottles at home, which urban said to sit on for 6 months till they sort themselves out. Alround rating: Very dry bittering hop, decent alcohol peppery kick, some caramel malts. Its perhaps a bit too dry and bitter at the moment for me. Its not really got a beery character that i can fit it into a style. Its fairly unique.

UPDATED: FEB 17, 2010 Bottle at Alvinne pre Zythos event 09. Am I the only one who got a big waft on diacetyl on the aroma on this beer? Carlo and Urbain say that we should give it 6 months in the bottle and the diacetyl will be re-absorbed, so I will re-rate this in the autumn when my bottles should be ready. Good hops on the finish though, really piney hops on finish but at the moment far too buttery for someone as sensitive to diacetyl as myself. 435313 2.8/5.0. Re-rate. Bottle from the pre Zythos event in 2009 and given 11 months to eat up that diacetyl. Now, no hint of diacetyl at all. Lots of hop and some hot alcohol on aroma. Some juicy raisin, but more sultana actually. It’s almost really good, apart from this bit of cardboard on the flavour. Rest of the beer is pretty good. Lovely big hops. Alcohol isn’t really very present in the mouth. Just this odd type of licking cardboard flavour in the mouth. Decent though.

Bottle. Weak teaish and grassy aroma. Cloudy dark amber colour. Very small creamy tan head. The flavour is quite hoppy, grassy, even getting a bit sour. The hoppiness gets a bit much. Good caramelly finish.

A collaberative brew between Struise and Pipework’s, an upcoming brewery in Chicago. The beer poured redish amber with an off white medium sized head. The aroma had some very present hop notes, citrus and a touch of wood. The taste was strong citrus, piney hops but with a nice malt character as well. The taste is a bit hot alcohol but drinks very well.
