Back in 2008, Urbain had the idea to age some Pannepot on wild yeast strains. As this was yet another of his crazy experiments, the risk was calculated and minimalized to an amount of 450 litres of Pannepot that was used on 2 barrels only. French red wine oak barrels were used were from Chateau Tour Baladoz, a superb Saint Emilion Grand Cru. Urbain used these barrels before to age Earthmonk and he has huge faith in the owner of the vineyard. After 2 years of peaceful aging, Alex from Brasserie 4:20 in Rome came by, and he did not want to leave without buying at least one barrel of beer at the brewery. Urbain cried when he had to prepare one of his barrels for shipment. Then he decided to bottle the other barrel, so he could start all over again.

UPDATED: MAY 23, 2014 my last pannepot to drink, as a ’surprise’ on bbf 12 ! thanx struise ! its sour, but in another way of geuze. kindof nice ! also some sweetness, yet i do not taste much pannepot .... nice light aftertaste.. Rerate . Bottle thnx to verbalessence . gusher pours dark brown. Smell is dusty sour taste is chocolaty , funk , not that sour , very round . Extremely dusty . Ice , but not great . Original score still stands

From notes. Tasted on 3/16/13 from a capped 750mL bottle (light gusher) that I shared at our epic Bottleworks tasting with Curtis, Jedi, and crews from Knoxville and Nashville. Pours dark auburn with a thick beige, pink-tinted head that leaves average lace. The nose is classic raisin and candi sugar Pannepot with a ton of funky, earthy, and spicy yeast. The flavor is plenty roasted with some oak added, but is all about the dried fruit quad and crazy funky yeast, not really sour, but super funky. The body is full with average carbonation and a long malty, roasted, and funky/spicy finish.

Keg at CBC2012, from some old notes. Deep brown, no head. Aroma is raisin, dried fruit, prunes. Thin in the mouth, slight carb. Flavour is tart, then sweet and raisiny - like dried fruit soaked in orange juice - then a touch of funk and wood, slight vanilla. Interesting.

From tap at Brasserie 4:20, Rome, v2008. Dark brown color with beige head. Malty, caramel aroma, vanilla, funky dark fruity. Sweet taste, also funky fruity. Medium oily, soft carbonation.

This beer here, this beer I had @ the Grand Tasting... Compliments of whoever dropped it off at the center table, sheesh thanks whoever did that!
Pours a hazy brown color with a very small head.

The aroma is huge and rich, briny and leathery with some light tart fruit, some musty basement, and some plum.

The flavor is rich and boozy with only a light but well integrated sourness. There are some leathery notes and some plum... but the wild yeast seems to have eaten up a lot of what causes Pannepot to be sweet as this one is really fairly dry.

A really fun beer.

Bottle (750 ml). 2008 vintage. Shared by verbalessence, thanks! Dark/amber brown with a small ring of beige foam and little to no lacing. Aroma is dusty and old with mushrooms, red fruits, wooden notes, oxidation, light vanilla and winey notes. Taste is also dusty with caramel, mushrooms, red fruits, oxidation notes, wooden notes, wine, vanilla and caramel. Medium body. Moderate carbonation. This is a very strange beast. There’s notes of the regular Pannepot, but they are buried under dust and the light sourness. The 10% alcohol is quite well hidden. Interesting.

Thanks koelschtrinker! A bit of a gusher. Pours super dark black/brown with a small tan head. The smell is dark fruit, cherry, dark malt. The taste is rich malt, dark fruit, a bit of slight tart sourness. The body is with nice carbonation.

75cl, Vintage 2008, retired exclusive brew, with wild yeast, thx alot to Dirk for sharing!, very complex sour brew, vinous/spicy and slightly woody/sweet, not too heavy, yet balanced, cloudy, small head, very good brew
