COMMERCIAL DESCRIPTION
This ale was brewed back in 2008, and in collaboration with brew master Ryohei Sugawa San from Rio Brewing & Co. Our goal was to brew a Belgian dark golden blond quadrupel with an enormous potential of aromas and flavors, and added complexity due to oak barrel aging. Bourbon barels from Kentucky were chosen due to their very special soft roast quality and noble vanilla flavors. Year upon year, different quality controls were executed, and we finally decided to bottle condition this very special ale in May 2012. Another three moths of cold maturing was done at the brewery, so we could be sure about the absolute quality before releasing to our customers.

2011 bottle. Appearance is light brown/amber, a two-finger off-white head which settles into half a finger and remains. A fair bit clings to the glass. Aroma- vanilla and bourbon is prominent, very vinous, sweet fruits, apple, malty, hints of caramel and sweet bread, boozy. Smells big, and complex. Taste- also complex. Boozy cherries, port, red wine, sugar, caramel, treacle, blackberry notes, vanilla, slight oakiness, bourbon, very fruity, not quite as full in the mouth but still syrupy, dark fruit towards the end, the alcohol definitely comes through. Very interesting, good.

Bottle. Light brown with medium sized off white head. Cognac, dark sherry, clementines, canned peaches, marzipan, apricot, orange cake, lots more. Very complex stuff, lots of wine and liquor notes, but also massively fruity. Full bodied with medium carbonation. Like nothing I have had before. Great stuff.

Bottle @ New Years Tasting. 2009 vintage, shared by me. Pours a hazy amber beer with big off white head on top. Aroma is vineous, malty, loads of different barrel characters and some slight yeasty influences as well. Flavor is sweet, boozy, vineous and has some chocolate and loads of malts in there. Feels like a perfect harmony between wine and beer. Some faint vanilla touches in the back here with a strange yeasty finish. Great complexity, good stuff overall!

3 year old bottle shared by Ajax. Dirty, hazy Amber color with thin off white head. Aroma is caramel drenched figs, light musty yeast with mild dying bourbon.

The flavor starts lightly yeasty and has some dark fruit hints thought the center. (Raisins, figs) I don’t pick up much bourbon at this juncture but I do get the wine barrels although the wine notes don’t really make the flavor cohesive. The wine note throws it a touch out of whack and gives hints at oxidation. Still drinkable but not sure if the quality justifies the price.

33cl bottle (2011). Hazy amber colour with a nice tan head. Liquorice, dates, peach and alcohol in the aroma. Average carbonation and medium to full body. Taste is medium sweet and medium bitter with some sourness and a long dry finish. Overall, more than a beer, a digestive.
