COMMERCIAL DESCRIPTION
Saint Amatus, also called St. Aimé, was a Benedictine monk.

He took the defense of the lesser man who was exploited by the Merovingian king Thierry III.

In Belgium, Oostvleteren is the only parish to patron St Amatus as saint.

Struise started brewing at Deca in Vleteren early 2006, we ankered ourselves by starting the development of our own micro brewery in Oostvleteren during 2009. With this adventure being on the rails, we thought the making of Saint Amatus 12 was as evident as can be.

The terrific artwork was brought by our narcissistic artist Carlo Grootaert.

Saint Amatus has aged on Woodford Reserve barrels from Labrot & Graham, Kentucky USA. Some batches were instead aged on Pappy Van Winkle whiskey barrels, both varieties are valid for this entry.

33 cl. bottle poured in to a Trappist glass. 2011 Vintage. Dark amber colour with a dense tanned head. Sweet aroma with overripe fruits, mature cheese, yeasts, molasses, the bourbon barrel shows as a sweet alcohol dense note. Taste is sweet. Full body with an oily texture and an average carbonation. Long lasting sweet finish with rich malts, liquorice, dark fruits and alcohol sweetness. Excellent Quad.

Oh grandeur des grandeurs, splendeur des splendeurs, merveille des merveilles... Je suis seulement sidéré que après 457 rates, on me laisse la possibilité de donner à ce miracle son premier 5 !!!! Mon exemplaire est un vintage 2011. Il a donc 3 belles années de mûrissement supplémentaire. Elle a subi par le brasseur un mûrissement en fût de whisky. Couleur marron foncé superbe, rousse en transparence. Clarté nette. Bulles très fines par milliers partout. Mousse beige foncé qui va napper constamment le breuvage d’une belle crème fine. Arômes de fruits mûrs, malt foncé, levure, pointe d’épices et fût de whisky. 1ère bouche à la texture soyeuse, veloutée, lisse, sur un beau volume de céréales avec une pointe de café moka. Arrière-bouche superbe sur des notes d’irish coffee. 2ème bouche qui insiste sur le café, mais avec une grande noblesse. 3ème bouche sur le pain complet, pointe de tabac noir, tourbe, fût whisky de grande classe. Arrière-bouche longue, complexe et très suave. La longueur commence sur les fruits mûrs, retrouve du tabac de la Semois, avec un peu de cannelle et une épice finement muscadée. La levure est de classe mondiale, sublime. L’alcool que le brasseur a fixé à 10,5 % abv, a encore pris un peu de bonus avec l’âge, et fait un travail exceptionnel de soutien au goût. La finale est divine, aussi bien dans sa texture que ses saveurs. CONCLUSION : incroyable premier 5 d’une bière qui en mérite 10, 100 et davantage. Pour moi, elle est incontestablement au-dessus du lot, et doit atteindre environ 555 sur 100. Immense bière qui a un historique profond chez les Struise, qui est un brassin superbe et en plus mûri en fût de whisky. Que demande le connaisseur ? Exactement cela, et tous les jours bien entendu. Une réussite absolue, que j’ai dégustée toujours avec le même bonheur.

Very dark brown with medium head. Chocolate, red fruits, toast, tart berries, brown sugar, prunes. Not too sweet actually, has a tart backbone. Medium bodied with light carbonation. Not a typical quadrupel but pretty good.

Bottle, BBE 29/08/16, vintage 2011. Pours a dark wooden brown with a decent-sized, thick, beige-colored head. Aroma is a lot of dark fruits, some liquorice and dark malt bread. Dark fruits dominate. Taste is strong with dark malts, dark maltbread. Some spiciness and a lot of dark fruitiness, dates. Light wooden flavor on the finish, some herbal hoppiness. Some coffee and chocolate on the aftertaste. Fairly high carbonation, pretty slick, medium full. Not as full as you’d expect. A nice, dark Belgian, but nothing that out of the ordinary.

33cl bottle at home. Very dark brown with a medium off-white head which disappeared quickly. Full body with light carbonation. Very smooth mouthfeel. Sweet with some spicy notes. Brown sugar, caramel, spices, raisin, vanilla and dried fruits. Another tast explosion from De Struise.

Interesting. No head and almost not enough carbonation. Taste is very nice. A bit sour with notes of roasted coffee chocolat licorice and dried fruit without being overwhelmingly aromatic. The 10% is well hidden.

Aroma of plum, light raspberry, bourbon, booze and floral yeast. Pours maroon without much head and or lacing. Thick texture a touch on syrupy side. Finishes sweet with some woodiness. Tap at Church key.

Ins Glas ergießt sich ein dunkel rötlichbraunes Bier mit schöner Schaumkrone. Geruch röstmalzig, sehr fruchtig, reife Früchte, alkoholisch. Geschmack stark fruchtig, dunkle überreife Früchte, leicht röstmalzig, alkoholisch.

Pours deep amber, decent head. Caramel, some toned down belgian yeast esters and some semi-sweet chocolate. Taste is very very smooth, no signs of the 10.5%, caramelly sweet, some oak quality, and faint dark fruits. For me a disappointment, it’s way too sweet, and the caramel masks the rest. It’s got really high drinkability for a quad though, and it’s quite flat.

33 cl bottle@home. Head: shrinking beige. Colour: ruby brown. Aroma: sour. Taste: sour, coriander, licorice. Palate: sour, sour bitter finish, watery, lively CO2. Overall: DtD, not my yeast.
