Bottle conditioned.
Ingredients: Barley malt, hops, cane sugar, yeast and spices.
Strong blond winterbeer with fluffy white head which has been lagered for 8 months on different stonefruits. Tsjeeses was born out of a 5 year brew experience regarding x-mas beer without being capable of finding a suitable name up to now. With the name came a face, a caricature actually, that was drawn on the day Urbain, our brew master and master brewer, drank too many Tsjeeses’s. Every time he drinks one, he says "Tsjeeses, what a beer". Therefore the name is more an expression of stupefaction than a curse. We have had already many discussions around the pronounciation of "Tsjeeses". Very close would be that you say "cheeses" or cheese in plural.

Bottle dated B-09-09, September of 09 I would assume. Cloudy amber pour with a thin off white head. Aroma of stone fruit, dark fruit, husky grain, light caramel, some cereal and lots of bready yeast. Tastes like a big sweet barleywine up front, lots of toffee, sweet caramel, butterscotch, spice, dark fruit, soon after some hazelnut, earth, hints of sweet nectarine and other stone fruit, sweet salted fruit and caramel finish. Heavy, chewy bodey, light but slightly sharp carbonation and slightly dry finish. Good stuff, it doesn’t seem much like a Saison, but being 3 years old I am not alarmed.

Bottle 330ml (2013) - cellared for 3 years. Served at room temperature. Pours a murky bronze. Head is large, foamy, beige and lasts well. Aroma is rich and complex; leafy hops (light), candied orange slices, dried apricots, brandied apples, lightly toasted raisin bread, cooked brown sugar, allspice and cloves (light). Flavour is smooth and slightly vinous with a very light leafy-hop bitterness; lightly toasted wholegrain bread, candied orange slices, brandy soaked dried apricots, dried currants, cooked brown sugar, cinnamon, ginger (light) and a lightly spiced finish (-coriander). Full bodied with an oily texture, medium carbonation and a good length, dry finish. MUCH better than I was expecting!

UPDATED: OCT 16, 2016 A long hard ride. Wild and very kräuterwürzig. Süß, wollüstig und very sweety 😁. Dunkel malzgranatig und ein außergewöhnlich komplexes und schweres Kaminbier. Wurde uns in einem wunderhübschen Struise Glas eingeschenkt. 0,33/5€ im CAFE DE KOFFER Groningen.

Lots on the nose. Sourness, spicy yeast, brown sugar. Like a fine dubbel with some sweet malts and warming doughiness. Interesting mix of sour and traditional dubbel. Some medicinal bitterness in the finish which didn’t sit so well. Very soft and the alcohol is nearly completely undetectable, but I expected something like other Belgian christmas beers.

Si la brasserie De Struise avait une devise celle-ci pourrait être : le goût avant tout. Leur recherche de la complexité et des arômes est particulièrement poussée. Même si cela n’est pas la saison, je me tente à la déclinaison en bière de Noël. Peut être l’envie de garder une âme d’enfant et de retrouver les bancs de l’école. D’une couleur ambrée, trouble, celle-ci présente peu d’effervescence et aucune mousse à sa surface. Comme toute bière de Noêl qui se respecte, celle-ci présente un fort titrage alcoolique, de 10% Abv, pour nous réchauffer. Au nez, les arômes sont très suaves, sur les fruits confits, le pains d’épices et les abricots secs. L’attaque première est sur le miel laissant ensuite place à l’amertume et un corps qui se densifie et se complexifie sur des arômes épicés, de pain d’épice et de pruneau. La densité gustative, importante, manque toutefois de maîtrise et déséquilibre fortement la Tsjeeses. La finale, longue, apporte de surcroit des notes d’alcool vieux tel que le cognac avec une touche liquoreuse provenant d’une saturation en sucre. Le palais est alors complètement perdu avec une impression de lourdeur soutenue. En conclusion, la Tsjeeses mériterait d’être épurée afin de gagner en lisibilité gustative. Il faut néanmoins saluer la complexité de cette bière. Et une chose est certaine, je suis bien réchauffé!

Bottle from Cork & Cask. Hazy amber body with a thin off-white head. No lacing. Aroma of syrup and strawberries. Flavour of caramel, peppery malt and heather honey - sweet but not cloying. Medium body with a sticky mouthfeel. Soft fizz. Drinks well for the strength but lacks complexity and depth.

Brown bottle, 330ml. Pours almond Brown and medium hazy with thin tan head of bubbles subsiding average. Scent is interesting Belgian triple with scents of Apple and ethanol. Taste is medium spiced Belgian ale. Apples. Cinnamon. Finish is smooth and a little sticky on the throat. Great.

At cellar cleanout tasting at deanso’s. Vintage bottle from 2012 courtesy of kermis. Very hazy orange. White head. Sweet malts, caramel, grain, brett, gumball, alcohol. Over medium sweet, light vegetal bitter. Over medium body, fizzy carbonation. Sweet syruppy finish.

June 2016 - Bottle share in Watford as ’Struise Tsjeeses’, 10%, 2013 vintage. Many thanks to Fergus. Dark murky hazy orange-brown, still, foamy dense creamy head, light lacing. Aroma is spicy, bready, tea, twiggy. Body is light, tingly carbonation, smooth. Taste is quite sweet, Candi sugar, some sherry, spicy finish, a little twiggy, some booze showing up. OK but a bit harsh and boozy. (3.3)
