Encore une merveille de derrière les fagots... Cette brasserie est littéralement insatiable (sans jeu de mots …). Une quadruple de 12 % abv, et 41 Ibu . Couleur roux clair, avec un tout léger voile de convenance. Bulles très peu nombreuses et d’ailleurs quasiment pas de gaz à l’ouverture. Mousse beige moyen qui vient napper finement, et on trouvera de longues jambes lors de la dégustation. Arômes de fruits mûrs, raisins secs, bois exotique, ceps de vigne, pointe de cannelle. 1ère bouche soyeuse, quasi huileuse, à la superbe entrée sur des pruneaux, du raisin noir et du blé noir. Arrière-bouche de malt et fruits mûrs. 2ème sur du miel brun, du malt caramel, du candi brun, sucre d’orge. 3ème sur du malt grillé, avec une pointe de tabac brun. Arrière-bouche très longue, à la texture huileuse. La longueur donne un grand fondu malt/fruits/bois. La chaleur se marque. Elle donne l’esprit d’un grand vin, avec des nuances sublimes. La levure est soyeuse, une très belle ligne. L’alcool est bien progressif, fort mais sans excès de chaleur. La finale est un pur régal. CONCLUSION : une bière qui mérite le respect, l’estime, l’appréciation sage. Comme dit le brasseur, elle est « alive and kickin’ »... Pour moi, cette quad est d’une grande noblesse, artistique et d’un esprit mystique...

This quadrupel has a moderate foam, which is rare for beer which is 12% alc. It smells very much of dried fruits, such as prunes, raisin and figs. The flavor is an elegant and very delicious composition of apricot, peach, raisin and prunes. Many times tastes quadrupels of dried fruits, but this XXXX tastes of fresh fruit, as aforementioned apricots and prunes. Hop bitterness is obviously reduced to the minimum, just like the type to be, but some spices, fresh herbs and a little taste of yeast together form the bitterness in this gem of a quadrupel. The alcohol gives a little tingling sensation in the mouth and it contributes to an abrupt awakening of all taste buds so all impressions allows full enjoyment. Definitely one quadrupel is top notch. It requires long-term enjoyment and great attention.

Keg in Central London. £7.50 a half… served chilled. Thin brown colour. The initial sip blew my socks off. Rich sweet malty with a raisin and vinous finish. Big big flavour with a big sticky body. Wow. A bit sickly, but good. A sipper. Flavour dies down after a while.

Vintage 2013, bbe 30.05.2019. A dark brown beer with a quite big and light brown head. The nose has strong strawberries and sweetness of berries, some dark fruits and plums. The great and fresh aroma. Taste has strawberries and dark fruits, more plums than in the aroma, some herbs and spices. Almost full bodied, not heavy, smooth carbonation. Excellent beer, strong strawberries gives the nice freshness. This isn’t very complex but that’s not bothering as the all needed pieces are there. Smooth, balanced and enojoyable.

Uitgeschonken in 33 cl. De Struise bierglas, mooi donker, enigszins troebel amberkleurig bier met stabiele beige schuimlaag. Geur van kruidige hop, rozijnen en Belgische gist. De smaak is heel zacht en behoorlijk zoet met tonen van rozijnen, aardbeien, karamel, houttonen en chocolade, maar ook een wat licht zurig, tannine rode wijn/port smaakpallet. Gecompleteerd door een fraaie, en aangename kruidige en bittere hopsmaak. Het mondgevoel is zacht met een aangename zachte carbonatie, en een lange kruidige zacht bittere afdronk. Het alcoholpercentage van maar liefst 12% is zeer goed verborgen, totdat het bier verder opwarmt. Deze Struise XXXX behoort tot de beste Quadrupel bieren die ik geproefd heb tot nu toe. Misschien niet de meest complexe Quadrupel, maar wel een uniek zwaar bier van mijn favoriete brouwerij uit België, De Struise Brouwers.

Bottle from the Struise shop. Dark brown colour, small golden head. Aroma is booze, and caramel. Taste is lovely, very sweet, caramel. Treacle, bit of bitterness. Boozy hit too. Some fruitiness, but sweetness is top. Lovely.

Tap at the Copenhagen Beer Celebration 2012. Pours a lightly hazy, bright gold with a fine, foamy head. Light yeast, rich bread and ripe fruit make up the aroma. Hugely sweet flavor with honey, caramel, ripe fruits, golden raisins, rich bread, light alcohol. Full bodied with fine carbonation. Warming finish with rich sugars, ripe fruits, marmalade. Very sweet but still nicely balanced. An excellent quad.
