This blonde and slight sour beer is the result of a research combining Brettanomyces Bruxellensis and Bourbon barrels & some skills out of the Wild Woesten

Bottle. Clear golden with a small not lasting offwhite head. Sourish, fruity, citrus aroma. Sourish, sweet and fruity flavour with grapefruit notes.

Golden pour; no head or lace. Non-deScript (mildly) soured fruit, yeasty, barrely, meh. Entirely forgettable.

75cl bottle shared with Urbain, merci! Dorée présentant un trouble léger, col blanc. Arôme présente ce bouquet alternant brett, grains et barrique; dans ce cas un chêne aux effluves de Bourbon. Je note un subtile bouquet boisé tirant sur des notes aigres renforcé par un léger ajout vanillé. Palais garde un profil assez belge, blonde solide avec un profil aigre très agréable qui vient juste titiller le fond de la gorge. Le tout est adouci par le mûrissage en barrique de bourbon. Ce dernier ajoute complexité et une pointe de douceur vanillée. Le houblon est présent ajoutant une amertume modeste, cela tournant sur un citronné moyen. Au final, une bière encore un peu jeune, et qui promet de se développer avec le temps. En l’état les brett restent modérés sans dominer le profil de la bière. Le Bourbon arrive juste en balance sans pour cela dominer totalement. Reste à voir comment les des brett et le bourbon évolueront au cours du temps. POur le moment, je voit cette bière plus comme une bière belge avec qcq brett que comme une bière ’sour’. Reste très correte et complexe.

Bottle @ Cervezorama. Hazy pale golden colour with a white head with good duration. Aroma is fruity, good presence of bretts and apples. Flavor is dominated by bretts, with a medium bitterness, fruity notes , mainly apples, similar as a cider and light acidic hints. The final is slightly bittery, dry and a presence od bourbon hints on palate.

UPDATED: OCT 30, 2015 Bottle shared by Urbain himself. Pours hazy light yellow with a medium fine bubbly head. Nose is quite subtle: hay, some wooden notes and slight vanilla touch of the bourbon. Light body but what a silky and smooth mouthfeel - waauw! Taste is elderberries, chardonnay wine.

Bottle Pours fuzzy light yellow , small white head That fades fast Smell is pretty damn intresting ! Like a sour bourbon , exactly 50/50 , no side wins on the smell Enters like a soft geuze , than goes to a bourbon . I never drank pure bourbon ( accept jack , wich is , according to some , not even real bourbon ) but for the first time in my life i think i can recognize a brand . Wild turkey . Am i right ? That would ve shocking and awsome ! All trough barrel aged beer lol Anyway , the mouthfeel ( and carbo ) of a geuze , imidiatly bourbon takes ocer , with a good sour background . Than the sourness dissapears almost completely . Wich lambic did they use ? For sure it aint boon( bad relationships between struise and boon ) or cantillon ( very recognisable taste ) . Is this 3 fonteinen / de cam / oud beersel maybe ? Anyway , as expected , extremely intresting , and as always with struise , very freaking nice ! Cheers !

Semi clear Golden body, small white head. Aroma, well all the sorbus vinegar and green Apple notes you need. Flavour adds some toffee and acids. Basic treat but really nice.

75cl, as Struiselensis, new exclusive brew Anno 2013, with Brettanomyces, from Etre Gourmet Beauvechain, complex sour brew, woody/malty and slightly sour/fruity, yet not too heavy, balanced, cloudy, good head, good brew, yet expensive

Bottle from EtreGourmet, 06/18/2013. Cloudy golden pour, dense fizzy white head fades after a minute or so to cover the surface in a hazy foam, thin ring of lacing. Aroma is lemon, apple, pear and sour peach, light tartness, musty barnyard funk, wheat, slight sweetness, vanilla, woody finish with a touch of bourbon. Taste is citrus,mildly tart tropical notes, sour malts and funk, dry finish with long, soft bourbon aftertaste. Medium body. Slightly sour, geuze-like though not as effervescent, the bourbon finish is pretty interesting. Solid.
