COMMERCIAL DESCRIPTION
To celebrate his upcoming nuptials, Summit brewer Sam Doniach created Honeymoon SaisonóBatch 07 in the Summit Unchained Series. Itís inspired by French saison styles which were traditional farmhouse ales brewed to quench workers on long, hot days. Samís creation has a refreshing citrus and floral character with hints of apple, pear and spicy, peppery notes. Itís brewed with a touch of Minnesota honey as a kettle addition and unfiltered for a smooth, clean finish.

Pours a lightly hazy orange with a 1 finger, fluffy eggshell head that has great retention and leaves nice lacing. Aroma is citrus, spice, stone fruit, floral and citrus hops, black pepper, sweet tree fruit and some crusty white bread. Flavor is huge on gravel dust stone fruit, tree fruit and pepper, usually I like a little dusty character in a saison, but this is a little over the top, light citrus and big spicy hops. Palate is light dry, and chalky, increasingly dry and chalky to the finish. Decent, but I think somebody threw some limestone in this beer.

Hints of fruit in the aroma. Odd, hints of fruit (apple, pear) with some citrusy zest and spice (dry, though fruity). I may need to let this one warm and breathe a bit, but my first impression is mixed.

A little mixed. MB liked it; I didnít as much. Slight fruit flavors, a bit of grassy hop, light yeast. Kind of harsh and unbalanced to me, but MB liked the body to it and the subtlety. There you have it.

(Draught) Pours a lightly hazy yellow body with a medium white head. Aroma of mustiness, herbs, florals, and grass. Flavor of grass, earth, honey, yeast, and florals with a moderately dry finish.

Bottled. Poured slightly cloudy golden with a short-lived white head. The aroma picked up sweet lighter fruits and honey with peppery and quasi-vinous yeasty notes around.. seemed a little heavy-handed and off-balance. The flavor found vanilla, spicy notes, and a hint of vanilla laced throughout.. darker honey and less bready notes for support.. finished tacky and spicy. Light-medium bodied with high carbonation on the palate.. too sugary to be refreshing.. just OK.

I typically like Saisons, but it seems like few brewers can make them well. This brewery cannot.

Aroma: The nose is mostly yeast and spice, with some lemon zest and wheat notes
Appearance: Pours a cloudy golden-orange color with a thick foam of white head and some lace
Flavor: The taste is light-medium sweet, it is fairly heavy on yeast and spice, with a just a little bit of funk
Palate: Light-medium bodied, with a lively carbonation, and a finish that is tingly, spicy, and slightly metallic
Overall Impression: Overall, this one falls a bit short. I didnít really find that honey presence they claimed was there at all. Beyond the lack of promised honey, it isnít a terrible Saison, but it isnít a good one either. The finish is a touch off as well, which takes away from the beer.

Bottle; Pour is murky gold with a decent fine bubbled white head in this glass. It retains well, and has some light and spotty lacing present. The nose is fruity, and definitely overly sweet for the style. There is some apple skins present, sure. The flavor profile doesnít improve much for me; some soap, light spiciness, fruity notes of citrus and apple; itís a bit too bitter, a bit too fruity, a bit too sweet ; overall, it doesnít work for me.
