A decent but pricey beer with a little pinch of lemon zest. Sweet and toasted with a bit of bready, caramel malts. Big and heavy mouthfeel with a small spice blend and a light floral yeast. Nice and easy to sip on but a bit bland.

Pours a hazy, straw color with a quickly dissipating white head. Getting some crisp citrus, hay, and booze on the nose. In the mouth, a refreshing tartness gradually tapers off against a mild malt profile. Lingering bitterness on the tongue with lemony aromatics hanging around. Smooth palate, carbonation level matches well with the style. A nice brew, feel I’d enjoy it much more on a sweltering summer eve though.

750 ml bottle purchase at Les Marchants de la Bière in Sainte-Thérèse (Quebec) on April 5, 2016. Hazy honey blonde, medium head. Aroma of sweet herbs and pale malt, nice kiss of citrus hops. Citrus and yeast taste, good grapefruit note, nice dry bitter finish. It feels like some super monks made this beer!

Bottle. Hazy golden with a medium sized off white head. Nose has minerals, hay, flowers, citrus, dust. Flavour follows with flowers, dust, dry grass, light rubber, alcohol. Medium body, oily texturer, lively carbonation, some sweetness ,mild bitterness. Feels a bit clumsy and alcoholic.

Bright lemon zest, spicy, and yeasty with some tropical fruit and great bready cereals. The aroma is spectacular. The body is perfect and the carb is lively. The finish is spicy, and bready with a great lemon zest bite. Superb beer.

My Bottom Line:
Lemon zest meets bitter herbs and bread in this beautifully modern twist on an Belgian-style Tripel.

Further Personal Perceptions:
-A veil of foam covers the misty blond-beige (head retention could be improved).
-The fluffy mouthfeel is perfectly authentic.
-Hop bitterness is quite lengthy, par for the course for a Dunham brew.
-This is like a cousin of Charlevoix’s fabulous Dominus Vobiscum Lupulus.

750ml bottle pours a hazy golden orange color with 2 fingers of white head that leaves some spotted lacing on the glass. Aroma is citrus with some caramel and hints of grains and yeast. Taste is a citrus hop bitterness with a light fruity and caramel malty sweetness and yeasty finish. Medium bodied with modest carbonation that pleases the palate. A really nicely crafted brew that is very satisfying.

Bottle (750 ml). I’m pretty sure this is b1, so more than 1 year old. Split 2-ways. Hazy orangey-golden with a medium to large white head slowly diminishing to end as a persistent ring of white foam with a little lacing. No doubt this is Belgian yeast in action with lots of fruitiness and spicy/peppery notes. The aroma is also quite floral with a mild but interesting lemony presence, a bit of alcohol, bread, zesty notes and hints of banana. Taste is also quite fruity with a strong but not misplaced backbone, moderate to medium spiciness, peppery notes, zesty lemons, floral presence and alcohol. Medium to full body. Medium carbonation. Peppery and lemony finish. There’s a bit of an acrid presence that lingers too much for my liking and offset the balance and therefore the drinkability. Otherwise, it’s a pretty good BSA with a nice lemony touch that held the 1+ year in the cellar nicely.
