Summers here in North Florida are hot and humid, not exactly the conditions that most ale yeasts prefer. This is why Swamp Head chose a yeast for this beer that likes it hot! This traditional ale yeast used in the Wallonia region of Belgium produces a complex seasonal ale known as Saison. They do their best work at temperatures above 80, while typical ale yeasts prefer temperatures in the 60’s. So we figured if we have to work in a sweltering swamp environment, why not brew a seasonal ale that enjoys Florida summers too! From the initial aromas of pepper and summer fruits to the lingering finish hinted of floral hops, Saison du Swamp is a bottle-conditioned ale sealed for any season.

Picked up from total wines in jax, pours gold, slight haze, white head that last. Some banana, honey, crackers. Light whips of grass. banana linger after the sip. Medium body.

Refrigerated 75 cl brown bottle corked and capped. Hazy golden with small white head. Aroma is really fruity, medium body, medium/low carbonation. Taste is nice sweet honey, fruity pineapple, and yeasty.

Bottle pour. Pours a bright, hazy gold with a white head of foam. Aroma has great pineapple and honey. The taste is sweet and fruity. Perfect mouthfeel. Awesome.

This very traditional Belgian style saison is sweet of banana esters and honey and spicey of light clove. Big nose of black pepper, leaves the palate primed for perfection. Golden in color, this big bottle conditioned ale is a true delight.

Pours a slightly hazy pale golden color with two fingers of tight white foam. Nose is nice blend of rustic grain, earthy yeast, dusty grass and a touch of grapefruit. Palate follows with bright carbonation, nice floral herbal nuances that are well balanced with the yeast profile and slightly dough rustic fieldgrain. Hints of tropical fruits and pepper linger late palate through finish.

Tallahassee, Fl. - Proof Brewing Company - on tap. Sparkling medium gold pour, sticky white head, nice thick lacing. Aroma has some sweet honey accents, a touch of aricots. Flavor is juicy with some pear-like fruit accents, some honey-like sweetness, a bit of honeydew melon and finishes with some nice rye mintiness. Lip smacking thick mouthfeel. Enjoyed this with Aurelius.
