COMMERCIAL DESCRIPTION
Summers here in North Florida are hot and humid, not exactly the conditions that most ale yeasts prefer. This is why Swamp Head chose a yeast for this beer that likes it hot! This traditional ale yeast used in the Wallonia region of Belgium produces a complex seasonal ale known as Saison. They do their best work at temperatures above 80, while typical ale yeasts prefer temperatures in the 60’s. So we figured if we have to work in a sweltering swamp environment, why not brew a seasonal ale that enjoys Florida summers too! From the initial aromas of pepper and summer fruits to the lingering finish hinted of floral hops, Saison du Swamp is a bottle-conditioned ale sealed for any season.

11/20/12. On tap at Green Room in Jacksonville Beach, FL. Hazy golden pour with a small khaki head. Light funk and orange peel in the aroma. Big orange flavor as well with a hint of funk, yeast, bubblegum, and a very light tartness. Not bad!

This very traditional Belgian style saison is sweet of banana esters and honey and spicey of light clove. Big nose of black pepper, leaves the palate primed for perfection. Golden in color, this big bottle conditioned ale is a true delight.

Pours a slightly hazy pale golden color with two fingers of tight white foam. Nose is nice blend of rustic grain, earthy yeast, dusty grass and a touch of grapefruit. Palate follows with bright carbonation, nice floral herbal nuances that are well balanced with the yeast profile and slightly dough rustic fieldgrain. Hints of tropical fruits and pepper linger late palate through finish.

Tallahassee, Fl. - Proof Brewing Company - on tap. Sparkling medium gold pour, sticky white head, nice thick lacing. Aroma has some sweet honey accents, a touch of aricots. Flavor is juicy with some pear-like fruit accents, some honey-like sweetness, a bit of honeydew melon and finishes with some nice rye mintiness. Lip smacking thick mouthfeel. Enjoyed this with Aurelius.

Honey gold, clear brew with a thin white head. Inviting, sweet, citrus candy and cidre aroma. Sourish with bright citrus and a slight astringency. Woody alcohol tones. Chemical tones from time to time. Surprisingly good. Proof, on tap, downstairs with PorterPounder.

On tap at Aardwolf. Pours a hazy golden orange with a thick white head. Aroma of sweet phenols, bready malt, sweet tart candies, hay. Flavor of sweet tart fruits, diaper, hay, bready malt. A bit sweet, decently drinkable, subpar compared to some of the top saisons. 6/4/6/3/13 (3.2/5)

Bottle from Market Square. Hazy deep golden pour with a large rocky white head. First smell presents cloves, spices and white pepper leaning into yeast funkiness and honey malt sweetness. Sweeter and thicker in body than one would expect with lemon citrus, peppery spice, yeast and honey. Medium thickish body with middle carbonation. Not bad.
