Well, the temperature is dropping and the days are getting shorter. You know what that means don’t you? It’s time for our WINTER BREW… A full-bodied, high-octane brew capped off with our use of cinnamon and mace. This beer will warm you all the way to your bones. Brewed only one day a year. We only bottle 4200 liters, 550 12 oz. cases, and a handful of kegs, so get it while you can.

Malt: 2 Row, Munich, Chocolate, Black, 30/37 Carastan, 70/80 Crystal, Spice, Cinnamon, Mace

Hops: Centennial, Golding

Bottle. The pour was a murky dark brown with an average sized (1-2 finger) head that was not around for long and only having fair lacing. The aroma was very mild of a toasted chocolate malt a very mild resin hop and a sweet doughy yeast with notes of allspice, cinnamon, toffee and dark fruit. The taste was moderately sweet and malty with a hint of toffee and some fruit at first then had the strong effect of spices take hold with a nice note of dark fruit and an alcohol warming sensation at the end. The flavor lasted only a short time while the taste of the dark fruit faded into the background of the spices. Mouthfeel was just a smidgen below medium in body and a tad watery in texture with a weak carbonation. Overall a Winter Ale with a nice dose of spices and a superb maltiness. A very drinkable brew even with the noticeably strong alcohol presence.

Poured from a bottle. Pours a dark brown with a tan head. Aroma is loaded with spice and malty sweetness. Taste follows the nose. Medium bottle and quite enjoyable.

From a bottle shared by jheath99! Pours dark brown with a thin, fizzy off white head. Tastes like bitter coffee, very malty, sweet caramel, burnt toast. Light.body and low carbonation. Smells like roasted malts and Irish coffee.

Bottle from Maltitude. Pours an opaque cola brown work a thin layer of beige head. Aroma of caramel, spices, and some malts. Taste of dark chocolates/roasted malts and some spices.

Bottle shared by jheath99. Pours clear cola brown with creamy off-white head. Aroma is lightly roasted malts, spices, cocoa, beef jerky, raisins, and dates. Flavor is malty and heavy spices with dark fruit sweetness, and faint hop bitterness; dry finish with light spices. Medium body and carbonation.

Tasting at the ever gracious ChrisO’s. Clear deep amber - red beer, decent pale cream cour head. Palate is airy and light, superfine carbonation. Airy malt, very light cream. Mild dark toffee streak. Spice kicks in, not too hot. Touch of dried fruits. Okay.

Bottle @ Chriso May 14 tasting. Pours darkest brown, cream head. Big choc aroma, lots of spicy fruit cake in the taste with sweet orange, dried fruits, almonds, burnt sugar.. others in the group gave this the thumbs down but I quite liked it.

Stainless growler pour, bottleshare at Ferris’. 2012 version. Brown pour, Thin white head. Nose has chocolate and caramel. Taste has cinnamon and clove and cocoa and caramel. A bit of cinnamon in the finish. Not great.

Growler - Vintage 2012 - Dark malts with a bit of cinnamon in the finish and some sourness. Cloudy brown with a beige head. A little roast, some spice and a bit of sourness. This didn’t age well.

Dark brown or black in hue, under a thin creamy light khaki head. Nice rich and sweet/herbal-spicy nose of earthy sweet cocoa, cinnamon, clove and toffee pudding. Big rich flavor that has a bit of herbal spice to it followed by clove, earthy dry cocoa and sweet toffee. Not quite sweet or dark tasting enough to be a porter though. Just kinda a dark winter ale.

Bottle at Chriso. It pours deep brown with a medium beige head. The nose is sweet, spicy, a bit of tangy HP sauce, gingerbread, toasty, brown bread, dried fruits and light tang. The taste is toasty, caramel, big spice, warming alcohol, earth, dark fruits, caramel and wood with a dry, earthy finish. Medium body and moderate carbonation. Not much depth to it really. All about the spice. So-so.
