Together with chefs Onno Kokmeijer and Arjan Speelman of the Michelin-starred restaurant Ciel Bleu we created this highly tasty I.P.A. The dry-hop with Waimea and Citra hops gives the beer a floral, bitter character and the addition of kaffir lime provides a tropical touch. Completed by a deep golden color, the Ciel Bleu I.P.A. is an irresistable beer. Ciel Bleu I.P.A. is on the menu of restaurant Ciel Bleu and is limited available in our pub.

Very dark hazy yet appealing light brown body with very creamy and stable yet huge off white head. Unique yeast dominating the aroma, yet not exactly IJ like, dominating the aroma, that?s supported by lots of biscuit and caramel malts. Very well hopped to, to make a gourmet mix in total. Exactly what this beer was supposed to be and it hits the sweet spot for me. As the refreshing yet full body with solid bitterness (that might be hard to pair with food) and I love it. Draft - Pours a cloudy, deep gold with a big, creamy head that left some lacing. Great citrus and floral aromas. Great balance flavors with a slight bitter finish. Wonderful beer.

Bottle at home in garden, evening, 29th June 2013. Pours murky deep orange, brown. Aroma is yeast is sour notes, yeast, and fruity. Taste is aromatic, the kaffir lime leaves really come through, together with hops and sourness, not sure if sourness is the kaffir lime or not. Unique and very enjoyable IPA.

Bottle at home. Light copper colour, offwhite creamy head. Crisp piny, orange zest and bitter lemon hop profile, faintly tropical fruity too, sweet malty base giving a good body. Good lengthy finish. Medium body, oily palate.

UPDATED: JAN 17, 2014 Ciel Bleu IPA Batch# 2013-15Medium foamy head, golden, light chestnut coloured.Sharp fruity pineaple, yoghurt strawbery sweet like smell. A medium carbonation, medium sharp bitter, sweet pineaple like taste, hoppy creamy a bit sticky.

Bottled., batch 2013-15. Hazy to cloudy amber color, huge thick off-white head. Soft hoppy aroma, tropical fruit, bit spicy and yeasty. Im smelling something weird fruity, which probably is the lime, not as citrussy, but more slight soapy and a hint of bubblegum. Quite bitter in taste, seriously bitter actually in contrast to a lot of bad other Dutch "IPAs". Good fruity, quite dry, but with enough caramel malt in the back to carry the bitterness. Quite high on carbonation.
