Brewed with Barley malt, wheat malt, vienna malt, and caramalt; Hallertauer, and Kent Goldings hops; Dark candy sugar, and White candy sugar; and Coriander, and Grain de Paradise. Finally it is aged in E.Dupont calvados cask 6 months.
Primary Fermentation: 2 Weeks
Secondary Fermentation in Bottle: Champagne yeast, port yeast and ale yeast

Bottled at Brugs Beertje. Hazy deep reddish brown coloured. Very complex aroma and flavour with notes of apples and other fruits and wood. Noticeable alcohol warmth. Full bodied. Very interesting and pleasant.

Poured into tulip glass a hazy rust color with tan head that sizzled with bubbles. Aroma was sweet to the nose a boozy sour apple with a malt backbone. Taste was winey, caramel, spice some booze and a little warming. The apple brandy casks this is Aged in really comes out in the finish. Very glad my beer store guy recommended this one.

Bottle to glass. Pours a murky light brown amber color with a light tan head. Aroma is funky sweet, toffee, apple, brandy. Flavor is moderately alcoholic, apple, funky, hard for me to describe. Medium to somewhat heavy body with a heavy feeling in the stomach. Decent alcohol burn. Not in my usual style repertoire, but tasty.

Bottle shared by wihorock. Poured hazy dark brown with an average frothy white head that was mostly lasting with good lacing. Moderate complex sweet dark candy, spice and yeast aroma. Medium to full body with a smooth texture and soft carbonation. Solid complex sweet flavor with a medium spice sweet finish of moderate duration. This is a smooth complex beer

Bottle shared by wihorock. Pours a cloudy caramel color with no head at all. The aroma and flavor have sweet, caramel, candi sugar, brown sugar, spices, yeast. barrel notes add more sweet fruity character, some booze, woody with a slight warming as I continued to sample. Almost drank like it was a bit oxidized, but seemed to work pretty well.

11.2 oz bottle 9/14/13 (Binny’s Naperville)-46° n Trappist Glass-Pours a murky deep amber with a small white head. Aroma of yeast, dried fruit, candy sugar, . Taste of sweetness, caramel, toffee, and apples. This full bodied brew is well balanced and is a very nice sipping brew.

Murk pour, very slowly-forming head. Huge smell on this one. Spices, calvados, really thick vanilla waxy oak, pretty damn decent. It has a prickling carbonation. Slight vegetaiton as I get usually in calvados but mostly it is a spicy but nicely apple tinged brew. There is a hint of oxidation and smoke that actually works well. Very good obscure gem from Belgium.

Sampled at the W&C on Ballas. It poured a hazy copper color with a small tan head. The aroma was of sweet malty bread, some dark fruit, caramel and a touch of brandy. The taste was dark fruit, malty, bready, apple brandy with a finish that was quite spicy. Well done.

Painfully strong aroma of cask wood, toffee, dark currants, raisins and such, and , oh yes, hard booze. Muddy brown color, espresso style head. Main flavor is profound sugary sweetness, background is sweet spice. Thick, foamy body that coats the palate. Somewhat like quad ales, but with to my sugar in my opinion.

Bottle at Bruce’s thanks to jackl. It pours hazy/murky deep amber with a medium beige head. The nose is sweet baked goods, brown sugar, crème brulee, vanilla, rice pudding and apple. The taste is caramel, toffee, earth, toast, preserved fruit, fig, prune, passion fruit and dried apple. Medium to full body and fine carbonation with alcohol warmth in the finish. Well integrated flavour. Decent.
