It is full of unique qualities that demand one’s own judgment be applied. Definitely picked up the mustard aroma and taste. Not overpowering, and not "hot", but definitely noticible. Candi sugar aromas and some caramel also come through on the nose. The mustard quality is balanced by a pleasantly sweet maltiness and discreet hoppiness. Head lingers long into the drink leaving behind some large arching lacing. Green apple mingles with banana and black pepper. Alcohol is present but adds to the aromas. Mustard doesnt seem like a predominant note in the aroma, though it is probably adding to the peppery alcohol mix. Flaovrs are strong but seem well rounded. Nice fruit flavors mix with the mustard and pepper flavors. Hot alcohol definately has a presence, but isn’t overwhelming. Finishes hot at first with bitterness from the mustard seed. Fades to a dry mustardy finishwith some woody character late into the finish. Some bready yeasty notes appear in the middle as it warms. I have had this beer before, recently in fact, and it definately had a noticible sour note that I am not getting from this bottle... a character which I was looking forward too. Aroma is convincingly spicy and dry with a really nice, yet strangely appetizing bready, cracker thing. Reminds me of those vegetable crackers. Its not quite mustard smelling but does carry over somekind of lemony/oniony/pickle/cheesy characteristics.
Flavors are dry with a lemony twist and slight notions of mustard spice. Good bready malt backing thats dry and sweet and entertains some interesting finishing qualities where some cloying mixes with dry acidic sourness. Seemingly Golden ale like but yet not.
Feel is just shy of medium body with an overall dry character mixing with some sour acidic stuff, kinda like a golden ale and small amounts of lambic-like drops thrown in. Light cloudy amber color. Nose is a malty alcohol. Starts sweet and smooth, finishes crisp with a hint of hops. Has mustard seeds but no hint of them.
