I love the "elephant" IPA that has been retired to make room for this new Ethos, so maybe Iím a little bitter but......itís still a good IPA. I like it, I do...but just a little less than the old IPA. Time to go buy up all the "elephant" I can find before itís gone forever.

Bought this on a whim, surprised at how much I enjoy it, have purchased a couple more times. It probably zeros in on what I like, my own unique tastes. A little more bitter, a little more dry.

1st Kansas beer c/o trade w/ UncleMike - thank you again!
Aroma - most notable is of course the hops which in the nose range from floral to resiny to citrus; the malt has a caramel quality, and there is also a doughy yeast.
Appearance - body is amber in color; liquid is clear; head is big about 3" and white, head retention is really strong hangs on for a good 3 minutes; nice dappled lacing as well
Taste - is bitter but with a slight underscoring of sweetness; the hops are very nice Centennial I believe, the hop quality tends to be more floral than resiny or piney. The hops are complimented well by a nice cara/crystal malt. There is a juicy citrus about it as well that really makes this something special.
Palate - body is light to medium; texture slightly oily; carbonation is average; the finish is slightly bitter and finish with a fruity floral quality.
This is a really awesome IPA, and to think I may have never known w/o Mike. Thanks again. Instant classic!

If I could only drink one kind of beer for the rest of my life I would quite possibly choose this one. Has a citrusy aroma of orange and pineapple mixed with a bright and clean hoppy smell. Pours almost the same orange color as the 16 ounce can it came in with a short head with moderate lacing. Taste is insanely quaffable. In place of normal bready maltiness there is a strong citrusy backbone, just fruity enough but not too sweet. Tastes of pineapple orange juice but blended flawlessly with a hoppy bite. Not necessarily floral, but also a little resin. The middle is dominated by a bitterness that really lingers. Nothing in this beer tastes "off" as it all merges into one clean, crisp flavor. One flaw might be the mouthfeel as it is a bit watery, but even that enhances the drinkability of the beer as it goes down so easily and leaves room for much more. Overall one of the best IPAs Iíve ever had, especially coming from a can. Definitely does not disappoint.

Can poured a slightly hazy orange hue w/ a huge frothy white head and sticky lacing. Moderate floral hop aromas. Initial flavor is moderate sweet w/ a bold bitter finish of lasting duration. Tastes are grapefruit, bitter orange, lemon, lime, pineapple, and grass. Full bodied, soft carbonation, and creamy mouthfeel.

For the seven years that Tallgrass has been active, theyíve churned out some amazing brews. However, some of their very best creations have been made within the last few years. Beers like Zombie Monkey have been game-changers for Tallgrass, marking the transition between a good brewery and a great one. In order to be considered great, an American brewery needs to have a fantastic IPA. I liked the original Tallgrass IPA. Itís solid in terms of hoppiness and balance, but itís not great. Itís cliched to say that Tallgrass went back to the basics, but itís fitting in this case. The can art and youtube ads lovingly satirize Herzogís Cave of Forgotten Dreams and it seems to be a brilliant representation of what theyíve accomplished. By going back to the hop flower and building an ale thatís perfectly suited to it, Tallgrass has finally crafted an IPA that is marvelously balanced yet pungent. The aroma has lots of grapefruit and subtle hints of caramel from the huge malt backbone. The taste reveals lemon zest, orange, mango, and pineapple. Make no mistake, the 110 IBU hop punch that occurs in the middle seems appropriate for an ancient, mythical beast, but this ale is so well-balanced that you canít keep yourself from returning for another sip. This beer is a huge step forward for Tallgrass. This is one of the best IPAís being made in the Midwest.

Sample pour at Beinnys. IPA which is phasing out the really nice oasis esb. It i a sharp and bitter ipa, west cost in style but lacking a bit of flavor and aroma, get it if you like dry and bitter.
