Bottle direct from the brewery & shared with Albert from AQ Bevolution & Brian "Stillwater" at Dig Bar. Batch 8 - 10 blend. A cloudy orange gold pour. With a thick filmy head that clings to the glass. Big barrel character in the nose oaky wine barrels - nice! Very soft mouthfeel, smooth. The taste is oaky, wine like, sweet, dry & tasty with a cork like mustiness plus a touch of spice.

Bottle - Lemon, some Brett and oak notes. Clear amber with white head. Light grass and lemon, slightest sour note and yeast. This was nice but could have sat in the bottle to allow the Brett to advance some more.

Bottle to flute at Dry-Dock Tokyo Lemon, Brett, and maybe some caramel. Clear amber with a thin long lasting creamy white head due to the strong effervescence. There are some particulates, but not unexpected as it’s a saison.

UPDATED: JUN 24, 2013 2010 version from bottle thanks to Mike.
Aroma: perfumed, funky dusty straw, boiled lemon juice, lemon pith, floral, yeast, white grapefruit.
Palate: soft, round, full initial mouthfeel with gentle "attack" of carbonation, followed by riper citrus flavors on the mid-palate and finish as this warms in the mouth.
Flavor: funky, ripe and non-tart lemon and grapefruit, dusty wheat, yeast, white peach on mid-palate. On the finish this morphs back into citrus and understated acidity with mellow bitterness. Brilliant, world-class. Much better aged in bottle than cask IMHO.

Aroma: sharp lemon, vinegar notes, and yeast.
Flavor: floral, pear, cider vinegar and cider.
Comment: 2010 vintage from bottle. Had this at the end of the evening, so need to retaste with a fresh palate. Certainly complex and perhaps a bit more pungently sour than the unaged Saison.

My Bottom Line:
Luscious wood melds into herbal hops and wild yeast angles in this beautifully dry, fluffy Barrel-Aged Saison.
Further Personal Perceptions:
-A studdy head of foam lingers atop the pale yellow mist.
-Herbal hops also contribute citrusy angles which go hand in hand with the mild tartness.
-Mouthfeel is bone dry and carbonation feels natural and effervescent.
-This is one captivating brew from aroma to finish.
-The light oxidation is stuck to the barrel character and is therefore nearly impossible to locate. Moreover, it’s completely harmonious with the oak.

Chardonnay like, with a good dollop of funk. Ripe granny apples, a bit of bubblegum, some vanilla wooded noses and a crisp, dry finish.

Bottle at Tim’s RPJG#2. Pours a hazy golden with whit ehead. Sweet and dusty. Medium bodied. High carbonation. Dry finish.

RBJG2. Cloudy blond with white head. Aroma is cheesy, very nice, funky, bit of fruit too. Taste is nice, cheesy again, very nice. Bit spritzy. Like the normal version and I like this too.

Bottle from Tanakaya, 2010 vintage, 01/24/2013. Pours sparkling, brilliant golden orange straw color, fluffy white head with nice retention and pillowy lacing. Aroma is a dusty cloud of fruity saison yeast, spicy biscuit malts with touch of citrus zest, subtle chardonnay-like notes in the finish. Taste is green apples and tropical fruits, pleasantly light tartness with hints of white wine, drying out with straw malts and farmyard, wood in the finish. Medium body, nice carbonation. Solid stuff, in my opinion on par with the like of Saison Brett or some Hill Farmstead offerings.
