Bottle from Yamaoka. First glass poured a lovely, opaque gold. The second was a murky, dirty gold. Huge wood aroma. Flavour is light and crisp. Great mix of fruit and oak.

2011 bottle from Tanakaya. In the glass itís a pale golden amber to orange colour, white head. Nose is sour, tart, Brett yeast, lemon citrous, light funk, cereal grains, yeasty, biscuit malt. Taste is light sour, light tartness, cereal grain malt, toffee, light funk and farmyard, bit of barrel aged wood, dry Champagne yeast. Palate is quite clean and crisp, with light citrous and funk on the finish.

UPDATED: JUL 1, 2014 Bottles from Otsuki. We sampled five different versions at one session. Iíll give my rating and comments for the best one of the five, which was a 2010, Batch B4 with Brett Brux, bottled in June 2011. Time in barrel is uncertain, but probably around 12-18 months. Big sour nose, full of lemon and ripe peaches, and some light perfumey notes. Very light lemon juice color. Very sharp, tart initial flavor, rounded peach and pear, full and smacking-good. A bit of oxidation, which was actually a plus. Great smooth and lightly tingling finish. Medium body, as smooth as can be. The aging has worked wonders. Each flavor appears and develops on the tongue. Great!

Bottle direct from the brewery & shared with Albert from AQ Bevolution & Brian "Stillwater" at Dig Bar. Batch 8 - 10 blend. A cloudy orange gold pour. With a thick filmy head that clings to the glass. Big barrel character in the nose oaky wine barrels - nice! Very soft mouthfeel, smooth. The taste is oaky, wine like, sweet, dry & tasty with a cork like mustiness plus a touch of spice.

Bottle - Lemon, some Brett and oak notes. Clear amber with white head. Light grass and lemon, slightest sour note and yeast. This was nice but could have sat in the bottle to allow the Brett to advance some more.

Bottle to flute at Dry-Dock Tokyo Lemon, Brett, and maybe some caramel. Clear amber with a thin long lasting creamy white head due to the strong effervescence. There are some particulates, but not unexpected as itís a saison.

UPDATED: JUN 24, 2013 2010 version from bottle thanks to Mike. Aroma: perfumed, funky dusty straw, boiled lemon juice, lemon pith, floral, yeast, white grapefruit. Palate: soft, round, full initial mouthfeel with gentle "attack" of carbonation, followed by riper citrus flavors on the mid-palate and finish as this warms in the mouth. Flavor: funky, ripe and non-tart lemon and grapefruit, dusty wheat, yeast, white peach on mid-palate. On the finish this morphs back into citrus and understated acidity with mellow bitterness. Brilliant, world-class. Much better aged in bottle than cask IMHO. From tap at Eni-bru rated a 37 Aroma: sharp lemon, vinegar notes, and yeast. Flavor: floral, pear, cider vinegar and cider. Comment: 2010 vintage from bottle. Had this at the end of the evening, so need to retaste with a fresh palate. Certainly complex and perhaps a bit more pungently sour than the unaged Saison.

My Bottom Line:
Luscious wood melds into herbal hops and wild yeast angles in this beautifully dry, fluffy Barrel-Aged Saison.

Further Personal Perceptions:
-A studdy head of foam lingers atop the pale yellow mist.
-Herbal hops also contribute citrusy angles which go hand in hand with the mild tartness.
-Mouthfeel is bone dry and carbonation feels natural and effervescent.
-This is one captivating brew from aroma to finish.
-The light oxidation is stuck to the barrel character and is therefore nearly impossible to locate. Moreover, itís completely harmonious with the oak.

Chardonnay like, with a good dollop of funk. Ripe granny apples, a bit of bubblegum, some vanilla wooded noses and a crisp, dry finish.

Bottle at Timís RPJG#2. Pours a hazy golden with whit ehead. Sweet and dusty. Medium bodied. High carbonation. Dry finish.
