COMMERCIAL DESCRIPTION
The second of the Three Shades is the sour, how did we get it soured? No we didn’t age it in a fluctuating temperatures for a couple of years, we used a Brettanomyces yeast strain.

Tap East. Semi opaque red -brown beer, small pale tan head. Light semi dry palate, a little crisp. Sweetish malt with mild cinnamon. Seltzer minerals. Smooth finish. Not sour! But quite interesting!

Cask at Tap East, London. Pours clear, red-brown with a light, bubbly tan head. Dark toast nose with very light hints of fresh brett, mild chocolate. Light to medium sweet flavor with rich toast, earth, baking cocoa. Light to medium bodied with fine carbonation. Moderately dry on the finish with decent roast and dark chocolate, very light hints of funk, dark bread. Nice. Not at all sour, but there is a light, VERY light funk edge. The brett certainly seems to elicit a greater intensity of flavor than the original version of this beer.
