Here at Tap It Brewing we take a unique approach toward crafting an India Pale Ale and challenge the current status quo. The goal? To craft an India Pale Ale hoppy in flavor and aroma that goes down smooth. We utilize the avant-garde method of First Wort Hopping, the technique of adding hops to the kettle before boil. This creates a harmonious explosion of hop aroma and flavor noticeable throughout the tasting experience. Fragrances of tangerine and grapefruit entice the nose. A thick hazy rich head leads drinkers toward an experience rich in citrus and earthy flavors ending with a smooth, sticky finish. The complex floral and citrusy tones from Citra and Simcoe hops welcome you, while two more hop varietals mate smoothly with four malt varieties for an unmatched aroma. Altogether, a crisp pleasurable full bodied taste. A word of caution: Drinking Tap It IPA around friends may cause envy.

Pours haze reddish orange, with creamy two fingers high head. Visually moderate carbonation. Aroma with malty notes of bread, biscuit and various fruity esters, with notes of grapefruit, oranges, tangerine. Flavor is firstly slightly malty, with bread and caramel like character, then become bitter, with hoppy/bitter dry finish. Hop bitterness is moderate high, but very well balanced with malty backbone. Fruity flavors are also present, with notes of grapefruit, pineapple, tangerine and oranges. Body is moderate full, texture is sticky, smooth, carbonation moderate medium.

Bomber. Golden amber pour, with a white head. Citrusy hops, pine, caramel malt, kind of sweet, bitterness, and bread. Ok, nothing special.

Poured from the bomber into an English pint glass. Light amber with minimal cream colored head. Aroma is primarily light and citrusy but there seem to be some dark fruit notes lurking in the background. Flavor has some biscuity malt up front with some earthy and citrusy hops. Mouthfeel is slightly sticky and body is slightly heavy. Not a bad IPA, but I’m not seeing what all of the fuss is about? Wondering if I got an old bottle as there is no date, although it looks like other reviewers are having similar thoughts as of late, so perhaps a quality control issue?

This is fairly ubiquitous around San Luis Obispo, CA, which is where it comes from; not quite Firestone Walker "805" ubiquitous, but easy to find on tap handles and in restaurants all around town. I picked up a bottle to close my Friday night down, and thought it was fine, just fine. It’s fresh, clean and piney, with a terrific aroma of hops bouncing out of the glass and into your nose canal. Really nice balance, with light bittering, 7% alcohol and crisp malts. Outside of pine there’s a faint hint of lemon, but not grapefruit. It is indeed hard for a "single" IPA to stand out these days, as legion of raters before me may have mentioned, but you’d do a lot worse than to drink the go-to IPA for hundreds if not thousands of Central Coast beer doggies.
