Introducing our new beer Saison du Pomme. This guy has been on the radar for a while, but as usual trying to squeeze more juice out of our brewery is never easy and faced with a busy summer of production the brewplan got delayed a little. It was the fantastic July weather and the juicy Scottish fruit which we were enjoying that became the inspiration for this summer harvest Borders ale.
The chosen yeast strain from Belgium’s legendary Brasserie Dupont, was cultured in house and then fermented at elevated temperatures in the traditional style for our recently brewed Farmhouse ale. The aromatic yeast was then harvested and introduced into a high gravity saison, partially fermented with fresh gooseberries from Kelso’s Rutherford farm and apple juice from our friends at Thistly Cross Cider shed. Champagne yeast was then introduced to finish the fermentation under pressure over a period of two weeks, where the fermenting carbon dioxide was captured and packaged up into 500ml bottle and keg.

Bottle shared at Chrisso’s May 2014 tasting 25/05/2014. Thanks to Leighton for this one. Golden yellow / straw coloured pour with a lasting white head. Aroma is spicy lemon zest, earthy straw. Flavour is orange peel, straw, earthy, slight stale. Palate is quite sweet, highish carbonation. Too Sweet for me.

Bottle shared at chriso’s May 2014 tasting - London. Pours clear yellow with a white cream head. Nice aroma, slightly wheaty, with melon and passionfruit accents. Light-medium sweet flavor with white grape, mellow lemony tang, straw, wheat. Medium bodied with fine to average carbonation. Lightly warming to finish with sugary wheat, further white grape, some salty notes. Nice.

Tasting at the ever gracious ChrisO’s. Lightly hazy gold beer, bubbly white head. Light palate, airy and dry with fine carbonation. Light floral bitterness. Little gooseberry tang. Touch of generic fruits. Dry seltzer. Dry finish. Not bad.

500ml bottle @ Chriso May 14 tasting. Pours hazy gold, spicy sweet fruity aroma, nice and creamy saison texture, Belgian yeast, complex fruity taste with gooseberries & apple core without deserting a solid saison character. Very nice indeed.

Bottle 500 ml, thanks to Lonick for this one! Poured into a tulip, ABV 8% Pours a golden yellow beer, slight hazy, with a tall white head, thick and with good retention, leaving medium lacing on the glass. Aroma is very yeasty, peachy. Taste has floral notes, malts, light yeast, dry white wine, I don’t get the gooseberries but that’s because I never had any, I do get some apple juice. Quite complex taste actually. Medium thin body, high carbonation. Overall very good, real thirst-quencher.

bottle from ‘trade’ with cgarvieuk shared with Eric. So the mountain came to Mohamed-thin offwhite-hazy gold. A-lt malt, yeast, berry. T-lt malt-bready, yeasty, berry/apple, grassy.

Bottle... Pours hazy and golden with a small, fizzy, white head. Good retention. The aroma is of spicy, fruity farmhouse yeast esters and phenols - pear, apricot and clove - with a hint of apple and a smidge of breadiness. Medium to full-bodied and lightly creamy with pillow-soft carbonation. The flavor is a spicy, fruity blend of Belgian phenols and esters - moderately sweet spiced-apples, light clove, mild acidity and a trace of bitterness. Finishes crisp, lightly bitter and spicy. Reminiscent of a ramped-up Saison Dupont. Big KUDOS to cgarvieuk via jcwattsrugger for the opportunity to try this unexported Scottish-brewed saison!

clear golden amber with a lacing of white head with an at first cereally becomming weizen like bananas and a hint of tart lactic in behind...not as expected. Fairly sprightly carbonation then something definitely Belgian in the yeast esters and a tart gooseberry note. Saison yeast most definitely dominates here. Quite light in body for its strength and there is perhaps some apple skins in there but a lot less noticable than the apple character in nikasi. It actually reminds of avec le bons veux - unsurprising given its the same yeast at a similar ABV but not quite enough fruit to make it truly sing.

Bottle from Beermoth, Manchester. It pours cloudy golden orange with a fizzy white head. The nose is sweet apple, gooseberry, pear drops upfront, then doughy, hay and ginger. The taste is crisp, tart gooseberry, apple, sherbet, candy, pear drops, minerals, wood, barnyard, white grape skin and some alcohol warmth with a dry finish. Medium body and effervescent carbonation. Perhaps a touch too sweet on the nose. Balance works rather well. Good fun and rather quaffable stuff.
